    Hannah, I just wanted to let you know, I've been a fan of your channel for a long time. And when I need a kick in the ass to remind myself where I want to be and why I'm doing this, and know the journey it will take to get there, I go back and start at your oldest videos and work my way all the way through every video until I'm back at your most current again. I think I've done this about four times now, so you see the struggle I go through within myself. Your channel is the ONLY channel I subscribe to that I watch every single video and actually apply the practices and information to my life, and also the only one that I actually make the recipes because you make them so simple, which I need. Thank you so much for all you do. The struggle is deep and it's real, and knowing there are people like you to help people like me in our journey gives me courage and strength.

    Oh my....for people that want perfect noodles please do not cook them like how she shows you. You are supposed to soak them in warm water for 10 minutes, while the noodles are soaking get a pot of water boiling. Add the noodles to the rolling boil and cook for no longer then 2 minutes. Then take it to the sink and rinse with cold water. Now here's the trick...put the rice on a plate and have it air dry for about 15 minutes. I like to arrange it around the perimeter of the plate. This method results in perfectly cooked rice noodles that aren't mushy. I learned this method from my Thai mother who learned it from hers and so on and so forth.

      If you see this, could you explain something I don't understand? You say the trick is to put the rie on a plan and have it air dry for 15 min. around the perimeter of the plate. Did you mean rice noodles? or other rice? Thx.

      Letting rice noodles dry makes them become sticky and they'll clump together...I would advise people to NOT to do that.

      The super thin rice noodles don't stick like bigger rice noodles, i make these noodles all the time and you want them a lil aired out, if not they get mushy- too moist and they go bad quicker

    Rice noodles is the same as pasta everyone will like them differently. The thickness and type of noodles are also a factor on how to cook “perfect noodles”. I am Thai and grew up eating “perfect” noodles and just thought I hated them when actually I prefer them slightly softer than most. It’s trial and error people, have fun and experiment, great video Hannah! :)

    I like the flavor of the ingredients but what I really like is the feel of biting thru the rubbery rice paper in combination with the crunch of the vegetables.
    I could eat these everyday!

    Another way to soften the rice paper is to fill a large bowl with warm water and dip the rice paper in it.

    two spoons peanut butter, two table spoons of vegan hoisin sauce, pinch of mustard powder, tarragon and curry powder blended with some water, to make a sort of thinned satay sauce tastes like god on these holy crap.

    I just use honey and roasted red pepper flakes, plus coconut aminos as my dipping sauce for other things,, but never made these my self. I’m gonna try it.

    from someone who lives on the driest continent on the planet, I can't believe that you waste so much water running the wrapper under the tap when a plate or bowl of warm water will do just as well for more than one roll.

      I know you're just trolling, because you literally hold it under the water for like 5 seconds. Plus as a vegan, her diet saves SO MUCH WATER. The production of one hamburger uses the same amount of water an American uses showering for several months.

    Avocadoes go amazing in this.

    Hello! I am transitioning over to a vegetarian/vegan lifestyle. I noticed you are a high carb vegan. Most of the raw vegans I know from RUclips are 80/10/10'ers. What is different about a high carb vegan diet? Is it better for weight management? I'm only asking bc during this transition I have been losing some weight and I would like to maintain my weight or even gain lean muscle.
    I am also very excited to try this recipe. I love spring rolls and I'm thinking they might be a regular part of my transition. Thanks for sharing.

    I always thought it was redundant to have rice noodles inside of rice paper. I've never had authentic spring rolls, so I just shove tons of veggies in mine ^.^

    Awesome! Going to make these this week. :) I absolutely love your channel and have always wanted to convert to being entirely vegan but struggled with recipes. I bought your and Derek`s books and I couldn`t be more happy with them. I tried to make your lemon pancakes but struggled on the weekend to get them to fully cook.       khoa nguyen I get these same spring rolls at my local Thai restaurant. They may originate in Vietnam but they are only served in Thai restaurants in America. It’s rare that you come across a Vietnamese restaurant. So maybe that’s why she has it confused. I thought they were Thai too.

    I could eat them everyday thanks for sharing! I’ve made them a couple of times. But it’s not that easy!

      Its basically just a tbls of sweet and sour sauce a tbls of pb2 a teaspoon of rice vinegar and a teaspoon of soy sauce. Then you just whisk it all together :)

    I've made this before but I just didn't like how the rice paper was so soft and slime feeling, how can I fix that?

      luisa dominguez don't run your rice paper under the tab like that it will turn soggy , I cringe when she does that 1 get a bowl fill it about half way with warm water -Don't soak your rice paper dip it into the bowl instead turn it round to make sure that it cover with water then place it onto a plate or a board cutlet , then you can fill up your feeling - that way the rice paper won't be soggy

      same. but then i went to a little asian store. you could probably google asian food shops near me or something and it'll show you. i went and they had tons of rice paper. and i got it for under two dollars with tons of sheets. hope that help(:

      Iingrid Klausen Even Thai chefs in Thailand say that's Vietnamese cuisine. "Ahan Wietnam" could be heard in those clips means "Vietnamese cuisine" in Thai language. Thai cuisine doesn't have spring rolls even the name "popia" ปอเปี๊ยะ in Thai language borrowed from Chinese language. Just give you 2 links to confirm:

      Thai makes it too, Thai markets spring rolls in thier restaurants as well and many ppls first contact with spring rolls is through Thai restaurants. Just like making an American burger, burgers are from Germany but many ppl know burgers through America.

      The word "oriental" is actually a problematic slur. It doesn't even refer to a specific place but is an incorrect ethnocentric term that was used by colonists to belittle people who lived not just in Asia, but many other "exotic" parts of the world. It's similar to the n-word in that aspect, really. So we should eschew using it to describe people and things of Asia.

      Kay, you ARE correct. People here don’t understand correctly. ANIMATE objects like people are ASIAN. INANIMATE objects like stores, paper, etc. are Oriental. It has NOTHING to do with slurs or anything like that. This is perfunctory English.

      Maddy Shillito Asian is the word you use for LIVING THINGS, animate objects. Oriental is the word used for non-living or inanimate objects, like a store. Perhaps the Asians who own these Oriental markets don’t have a grasp of this technicality of the English language. It’s very possible as it seems most native English speakers don’t know this, either!
      “The local Asian store” LITERALLY and GRAMMATICALLY means a store where Asian people are sold.
