- The Nuoc Cham dipping sauce is essential for eating many Vietnamese dishes, such as crispy spring rolls, fresh spring rolls, bo bun.
It also goes very well with a lot of dishes from other origins, and it greatly contributes to their success. It brings salty, sweetness, acidity and umami. There are as many dosages as families. In my preparation, I like to find a balance between all the flavors.

1/4 cup (50g) fish sauce
1/3 cup (75g) sugar
1/3 cup (75g) water
1/4 cup (50g) lime juice
3 garlic cloves
Hot or sweet chilies

Perfect recipe and thank you for measuring everything in grams. I realise this is normally a recipe that doesn't use measurements and is instead ratios are mixed based on taste but we can only do this if we are familiar with the sauce we're making and the individual ingredients. For many of us, we won't know how Nuoc Cham should taste and fish sauce will be un unfamiliar ingredient. So thank you for measuring all the ingredients to give us a baseline recipe to use as is or tweak to our taste.

Is it sweet or not ,because of the sugar in it ,i want to try it but i dont want the sweet taste in the sauce
@@mira-mq8ig it's a perfect combo of sweet and sour. But I like it more on the sour and savory side so I add just a bit more lemon and fish sauce to mine.
@@thickfoodiesdaily that's what i did and it trun out to be the perfect mixte ,as a moroccan we are used to mixing sault and sweet in our dishes it works perfectly ,i didnt expect that it will work in this sauce but it did ,and it was great and as tasty as the vietnamese lady used to sell us in the summer ,thank you so much for answering my question

Hello Morgane. Do you think it's great idea to use Stevia and Monkfruit for another Sugar alternative natural sweetner for somebody who is diabetic???? I was wondering if those mentioned healthy sweetner really works for making vietnamese fish sauce based dipping sauces.... 🤔🤔🤔🤔 I know someone who is diabetic but loves vietnamese foods wanna be careful about what he eats.... btw, I always enjoy watching your vietnamese and french dishes during my free times from work to think about what to cook for my next day or next weekend and so and so.

Hi fish sauce is important to get the flavour of this dipping sauce.
You can use oyster sauce. I make this Mung bean sprouts dish that calls for fish sauce but I always substitute it for oyster sauce.
Asian markets sell vegan fish sauce so you get the flavor without the fish.

To properly incorporate the flavours, yes. You will notice a difference in quality- don't ask how I figured/ found that out. LOL Enjoy. Let it cool before consuming.
