I didn't have "good maple syryp" so I used whatever syrup I had and added a little bit of raw honey. I also only had dark brown sugar (that was hard as a rock) and they came out fine.
Personally, I'm not a fan of cooked carrots, but my husband loves them. Tomorrow is his birthday and I'm making him swordfish with a white lemon chive sauce and red potatoes. I generally make a zucchini and summer squash mix for veggies, but am thinking about trying your carrots instead. Do you think it would go well with the meal I'm cooking?
That sounds like a delicious meal, Kym! Your husband is one lucky guy ;) These carrots are absolutely wonderful and provide a sweet, almost candy-like flavor so it can be a nice contrast to a lemon sauced-based dish with potatoes! Kind of like when some maple syrup goes on your bacon or fried chicken!

I am serving baby carrots as one of my Bird Day dishes and this recipe is very helpful, not to mention yummy!:) Just one question, I have a Ninja Foodi 402. Would I use Steam for 2 minutes (cooking the carrots) then switch to sautee for the glaze portion. Many thanks and Happy Gobble-Gobble!:)
Sub in Coconut Oil instead of the butter....makes it a bit healthier. You could get a big jug at Costco and its got tons of health benefits without dramatically changing the taste...
Butter being bad for you is a 40 year old myth that has been debunked. Sugar is your enemy, not fat. Unfortunately the sugar industry (everything has high fructose corn syrup in it) has gotten so big the myth is going to take a long time to go away. I’m diabetic and test my blood often. I learned the hard way.

Sub out that water for OJ, and hit it with some fresh lemon juice at the end.

Pressure cook for 2 - 3 minutes, not steam
“Manual” is sauté. Choice of low, medium or high. He specified high.
