    Ah, Chili.
    This dish is essentially a hearty ground beef stew that has hints of southwestern flair to it while remaining completely subjective based on the geography in which its created (beans vs. no beans; spicy vs. mild and so on). So, basically, there is no right (or wrong) way to make this classic Americana dish.
    That said, there's Chili...and then there's CHILI.

    I've never made chili in my entire life and I literally just won my company's chili cook off going off of your recipe. It wasn't beginner's luck, it was pressure luck's recipe 😉

    I’ve made chili 3 times in my 67 years of life. They were all 3 pretty laughable so I never made it again….until this one. Thank you Jeffrey for saving my reputation! It’s the best there is. My family requires it. Whether served over a baked potato and smothered in cheese. Or with a spoonful of rice in the bottom of the bowl , then chili, and a handful of oyster crackers over the top. And of course a PBR beer.

    Because of yr videos people think I'm an alcoholic now. You showed me how to cook with wine and I now have several different types of wines on a shelf. I made Mulligan stew last night and threw in some merlot. I had no idea wine could take a dish and turn it into something super special. Thank you for broadening my horizons. 😍

    This is my new favorite kitchen tool! Day 1 I was going to pressure cook a meat ruclips.net/user/postUgkxG-7WiT7ocumjytOpHDFt632PL0pxXRAg and potato stew, decided I wouldn't eat it that night so I went with a slow cook so I could go to bed and put it away in the morning. I love that versatility! The sauté feature works great and adds tons of extra flavor to dishes, and I can easily sizzle meats in the bottom then deglaze for some restaurant worthy flavors.Big bonus - you can cook a whole frozen chicken in about 2 hours. Amazing! I've seen a couple videos, haven't tried it yet, but I will soon!

    Jeff, I made your chili recipe substituting ground beef for smoked roast ( 3 hrs ) then Sous vide it for 24 hrs. I shredded the meat, added same spices as you & real kidney beans. Took it our church chili cook off & I won 1st place in about 15 different types of chili. So thank your recipe 👍

    I have owned my instant pot for a little over 3 weeks and it is amazing. I went shopping got all the ingredients except the 1 habanero pepper which i will be adding next time. This was a very good recipe. Thank you

    I made my first batch yesterday with a few substitutions: ground turkey, 3 anaheims instead of poblanos, ditched the jalapeno and habinero and substituted a big glob of the Chili Better Than Bullion......then added 3 tbls at end......and it came out GREAT! You have turned me on to Better Than Bullion products and they should reward you!

    Omg! Jeff,
    I just made this chili and it came out fantastic! The smells that filled the kitchen and then giving it a taste when it was done. Thank you so much for giving us all these fabulous recipes to make in the instant pot. This is only my second time using the Instant Pot but it is definitely not the last. I just got all the ingredients together to make the loaded potato leek soup next. Can’t wait. You rock Jeffrey!

    Can you do a video on how to dice vegetables by snapping your fingers, I just can't get it to work. I had to do it the old fashion way, but the chili was still awesome none the less. Great video.

    This is seriously one of the best chilli recipes I've ever found. The "better than bouillon chilli" is not really needed. Still absolutely delicious! I've made it with and without.

      lol didn't notice your comment until after I commented, when I take the cornbread out of the oven , I use a butter brush, and spread just veggie oil or canola oil, over the top and then place the cornbread under the broiler, have to baby sit it, then the texture of the top of the cornbread becomes crunchy and when you pour the chili over top it doesn't disintegrate your cornbread and it makes a good resting place for your sour cream as well.

    I had originally planned to make this for family on our beach trip this past week. I Brought down my one pot and all of the ingredients but I never got the opportunity. I ended up having to throw out the meat I bought.
    When I got back home tonight, I bought more meat and made this for them first time. I didn’t use them oregano or the sauce in the green container. I also could not find taco sauce so I substituted taco seasoning. I did order the better than bouillon chili and left out the habaniero pepper.
    It was done quick and it tasted perfect! It is the best meal I have cooked in my one pot so far.

    I’ve been a student of the cooking game for a long time now, and this is seriously the best chili I’ve ever made. I didn’t have the bouillon stuff so I used one tablespoon of liquid smoke, and habaneros kill me so I did a poblano, jalapeño and two Serranos and it was perfect. Thanks for the great recipe!

    The best comfort food ever :) Your recipe sounds very tasty! The addition of the Hoisin sauce made me think of how my dad did his chili. He used ketchup. Not that that's an equivalent, but the sweet tones of the Hoisin sounds like it would be an excellent trade :)

    I cubed a chuck roast (about a pound). Browned it in the instant pot then added the rest of the ingredients except the beans. I cooked for 25 minutes then added 2 cans of black beans (did not drain) and the chili seasoning. Delicious!

    My gf and I apparently needed a warning label when it came to the habanero! Its been a couple hours+ since we made this and we’re still on fire in parts you wouldnt want to be on fire. Lol

    Was making this in my pressure cooker and it smelled so good. I like using the base of this recipe to make it my own, and will never go back to how l used to make chili. Although Hoisin Sauce and beer are not used for the liquid, l season my ground beef like taco meat, and use some of the juice to throw in the pot. Also chopped celery and bell peppers are added, along with onions, and a diced jalapeño pepper. A day in advance l like to clean some pinto beans to cook on the stove, and use them with the can of kidney beans, Rotel, diced tomatoes, and tomato sauce. Finally, l check the flavor to determine if pepper, garlic, cumin, Italian seasoning, or chili powder is needed. Since my meat and pinto beans are seasoned, l use a couple of chicken bouillon cubes, and steer clear of adding salt. I’m glad l came across this recipe because my family has fallen in love with it.

    Oh thank the maker! I brought my Step By Step Instant Pot cookbook to work to order ingredients. Of course I showed off the pictures and told everyone how much I was looking forward to making this recipe (I was so happy I found the Better Than Bouillon Chili base to add to my dish). I was really looking forward to making me some chili this weekend. I get home and found I had left my cookbook at work. So distraught, I collapsed right into my fainting couch! Hoping against hope, I search the interweb, and holy jalapeno - I discover you have this super chili secret posted for all to see on RUclips. Thank you Jeffrey, you saved my weekend!

    Just got my Instant Pot. After the test run of 3 cups of water, I knew Chili would be the first thing to make. This recipe was perfect! Perfectly seasoned, not too spicy (I left out the Habanero) and perfect for my first meal! Thanks!

    Also - I love to use light red, dark red Kidney beans, Northern white beans and black beans - the textures vary and I like the different colors in it :) I usually rinse the beans but I've also just dumped it all in - both were good so I consider rinsing optional.

    I have made this recipe many times and it is always a hit, but this last time I added the "Better than Bouillon and in my opinion that was a mistake. It made the chili super strong and salty. I would suggest tasting this before using it and judge for yourself if you want to add it or maybe only add a couple of tablespoons. Other than that this is definitely a WINNER

    I have used several of the Better Than's and never heard of a chili base! Ho;y crap I feel like I just crawled out of the bunker after a 5 year waiting period after they dropped the big one! Blown away! Thank you for the video.

    I love making chili, its one of my pride and joys to cook. I will have to try my instapot since I usually use my cast iron dutch oven or crock pot over more time than this. I also agree, chili is your own, make it how you want, stop saying there is only "real" ways of making chili. I want everything in it! Veggies, meats, spices, beans, you name it. I do it slightly different each time and my wife always enjoys it.

    Love you Jeffrey! I made this last fall for a chili cookoff-but tripled it and sadly I must’ve goofed something up because although it was tasty it was too salty. Tasters were commenting about that even though they were intrigued so although it didn’t place in the top 3 it still received several votes. I am going to give it another go though and just tweak a little to control the sodium because I think this chili has great potential!! 🎉

    I love chile. LOVE IT. My husband can have it every day. My chile is very similar to yours with the exception of two ingredients: 1 Tablespoon of unsweetened Cocoa and 1 Tablespoon of Smoked Paprika. Add these to your chile and tell me it doesn't make it even better!

      I bought an Instant Pot and a Cosori 8 qt. pressure cooker, I cooked Beans, Chili, Pot Roast, oatmeal, Chicken & Pasta and WIngs, they all came out almost exactly the same, all tasted & looked great, all cooked about the same amount of time, the big differences, the Instant Pot was 6qt for $79 Cosori was $65 on Amazon, for 8qt Instant had no glass lid, you either had to pay a lot more for another model or extra for a lid, the Cosori came with a glass lid, the Cosori had many more preset buttons, and I like the steaming rack that the Cosori had, overall for the price and everything, I would take the Cosori Pressure Cooker everyday over the Instant Pot, which really is nothing more than a new name for a Pressure cooker.

    Sooooooooooooooo I made this recipe without habenero, jalepeno and the chili stock at the end. My picky 10 year old who hates chili ate 2 bowls of this. The second bigger than the first. The entire family was a big fan of this recipe. 10YO woke up and ate the small left over chili for breakfast. It's REALLY good. Oh! I also used a half cup of men's room. For some reason, I thought an IPA would be a great beer for chilli.

    Modified this recipe, used a ghost pepper, ground pork and beef mix. Skipped the poblano, just didnt have it.
    I usually use a crock pot for my chili, so using the instant was great for the saute button! Just adds that extra flavor.
    When I make chili in my crock pot I used not ground pork.

    so good!!!! I used habanero, puréed chipotles and canned diced green chiles for this recipe. Also added a red onion, and used real diced tomatoes to help because I only had one can of sauce 🥴 still worked out amazingly. great call on the hoisin! & 1/3 tbsp of the better than beef bouillon still does well in this recipe, if that’s all you have 😊

    I just bought my first Instant Pot a few days ago and found your channel while searching for techniques and recipes. I haven’t found a recipe yet that I don’t want to try! My problem is I don’t know which I want to try first. This may be it. It’s rapidly becoming soup and stew season (aka winter), so a good time to play.
    And Better Than Bullion makes a chili base? I need a case of that! I discovered BTB not too long ago and it is amazing!

    For my taste. It is a bit too salty. Cutting back on the salt, adding more onions, the second time was perfect for my taste. After all, it is my chili

      Kosher salt vs table salt, you would use less than half of table salt. The amount is not interchangeable. (Kosher you use more) they are not the same

      Same, and I love salt A LOT. And yes, I used kosher salt as well. I think the biggest culprit is the bullion. I'll definitely make this again and experiment accordingly.
      Also note: we used unsalted butter.

    Made this for dinner last night and it was outstanding! Best chili we've ever had! The only ingredient I was not able to find for this time around was the Chili Better than Bouillon. I also only used a poblano and it was plenty hot enough for us. So glad that I found this recipe!

    I love Chili. I use Senor Gordons. My friend in Edgewater has a franchise business making this. His grandparents built the factory, complete with running water for his mom Helen. Glen took over the business. They take it to a packaging company in Denver. It is only sold in Kroger (City Market, King Soopers) Store. If you want to check it out and can't find it let me know and I will send you some. It is great on eggs, in burritos. I love it - and I love my Instant Pot! This is the best way to cook. I am going to make Richard's Dill Dip for both Thanksgiving and Christmas! Love your show!

    This Chili is awesome. Just adding this tip, If you cook small red beans ahead of time, I do 45 min. Then a slow release then drain and rinse.This way the beans have little to no gas effects on the body.

    Warmed up the next day is so true! Never better. It’s worth going to the trouble of making it all a day ahead so you can serve it next day, bc it’s definitely better the next day. And, this sounds like a great recipe! Thanks! 🥰

    Me being me, I always double the Meat in recipe's, so I also get a 1.5 pound Chuck Roast and put it through a food processor till it is a rough chili grind. This I brown just like the Ground Beef. Just remember with this much meat you will probably need another pan to brown it all in.

    Omg! This is sooo delicious! This from the World’s Worst Cook! I also messed up by mixing the beans in and adding the bouillon before cooking, lol… thank god the recipe is forgiving! Can’t imagine it could be any better if I followed the directions to a tee, lol. However, I will omit the kosher salt next time. Thanks, Jeffrey!!!!

    Just found your channel. Love it. Looking forward to making tour Birria tacos, Char Siu ribs, Chicken and Dumplins, and burgers. That's all I have watched so far,but I'm sure there will be much more.

    Came out awesome. My only tweek is that I add 1/4 cup coco powder. The flavor mixes in well with the chili spices.

    I bought an instant pot because i work an un healthy amount of hours. Then i found your channel and this is the first thing i made and it was great, next is french onion chicken, keep up the great work.😉😁

    This is a pretty darn good recipe. Despite making a couple of errors it still turned out pretty good. Can't wait until I do it right. But I did find it a little too salty...………. Gonna make it again, and again.
    BTW. I served mine over rice. One of my favorite ways to serve chili.

    dam this guy can cook amazingly. hes super easy to understand/follow and makes total sense. I watch like 8 videos on youtube how to make chili and im like huh? then i find him and im like ok i can get that. one of best on youtube only thing is everything is pressure cooking with him. would be nice to tap into some other kinds of cooking. I definitely think instant pot is paying him but its ok.

    Pre-mix 1 tbs masa flour with water or broth using a fork and add... adds a terrific background flavor and thickens at the same time.

    Some Guinness beer is AMAZINg in chili, as is some unsweetened baker's chocolate - it adds a beautiful depth to the chili. If you don't have baker's chocolate, you can also add some unsweetened cocoa.

    Here in Detroit and there in Brooklyn you have a little gem called McClure's Pickles. They make a spicy Bloody Mary mix out of their spicy pickle brine - I add a cup of that Bloody Mary mix to my chili. Like the Spanish Inquisition no one expects to taste spicy pickle juice in their chili. It's off the charts good and definitely sets it apart.

    I made this in my Instant Pot Mini Duo and it was amazing (minus the Better Than Bouillon, chili base, that I just received in the mail). The only thing I did not add, was a 14.5 oz can, of diced tomatoes. I even saved this recipe to my Pinterest. I have a favor to ask though. Can you make a chicken paprikash, in the instant pot, with your twist. I grew up with this dish and we always (for a lack of better words) cleaned the pot.

    Wow, really love your recipe. One extra addition is either 1tsp of good cocoa powder like Droste dutch processed or 2 squares of 70% cocoa chocolate like Lindt. No idea why this works but somehow it deepens the colour and flavour of the chili, like 1 tablespoon of branston pickle to curry. Tried to get your better than bouillon but $75 to send a jar to Ireland, muchas saddness.
