I made this for the first time yesterday for dinner for myself, my husband, our 12yo boy, and our 9yo boy who was a picky eater before going plant based. The kids liked it, but my husband LOVED it! I heard, "This is SO good!" at least 2 dozen times during dinner. 😆 The only "tweaks" I made to the recipe were to compensate for not having an immersion blender. I made the cauliflower pieces bite-sized to begin with, and during the immersion blender step I put the 9 cups my blender would hold in the pitcher and pulsed it until it was as fine as it would go and then mixed it back in before adding the rice. This left a few cups of bite-sized pieces of the veggies in the soup, which was requested anyway. Thank you for the delicious recipe! 👍👍👍👍👍👍
I made this soup today and it was out of this world last week. I made the creamy potato leek soup. It also was exceptional! I did, however, kick it up a notch by putting some smoked paprika in the soup. It pretty much disappeared, but it added immense flavor. Why don’t you ever use smoked paprika in any of your recipes?… just kidding. I did add the paprika but I know you are a big fan of it as well. Thank you so much for all you do. It was a plant-based diet that saved my life. I mean that literally. Thank you for everything.

It was blended and topped with diced Granny Smith apple, candies pecans, basil micro greens and reduced balsamic . Pretty good but a cup was $8. I’m cheap! It was definitely the healing boost I needed. And quite surprisingly satisfying! It was also the motivating boost I needed to get back up and to keep enjoying healthy living.
I found increasing vegetarian portion sizes gradually helped. At the same time I reduced the meat and dairy. I grew up with just a few vegetables as side dishes & small iceberg lettuce salads. It takes time to learn new cooking techniques & introduce new flavours and textures. I rarely eat meat now & very little dairy. A 100% transition has not taken place. I feel better, lost weight, save money, cruelty free & better for the environment.
I just discovered your channel and I’m looking forward to trying your recipes. The only issue I’m having with a lot of vegan recipes is that I’m allergic to nutritional yeast. What would you suggest as a substitution?
@@dianem3012 Not sure but brown rice can have more arsenic because it's more concentrated in the outer layer and the white rice has that removed. There are ways you can greatly reduce the arsenic by soaking, rinsing, etc.

Hi, you do not need to add vegetable stock, because all the aromatic vegetable in the pan, you need to add water and let them boil for few minutes, you will have a better flavor.
Or just make your own vegetable stock out of vegetable scraps and peels that you save in the freezer. It's so much better, less wasteful, and much cheaper.
If I wanted to make this recipe, what would you use in place of the Cauliflower? My family member has an intolerance for it - causes a lot of tummy troubles.
I was going to order some engine 2 vegetable stock on Amazon and noticed they had a few reviews that referred to it as worst vegetable stock ever and no flavor. Do you like it fairly well? Thanks for all your recipes!
I did WFPB diet but didn't lose weight. I believe in the power of plants but I switched to a Keto diet to lose weight and I'm losing the weight. The cauliflower is good, onion, spices, garlic all good but not the carrots and rice. Wondering what could replace the rice to make this keto friendly???

I used the instant pot last night to make this, with 15 min of pressure like you suggested. I did the rice on the stove and added it once the rest was done in the instant pot. Turned out delicious!

Live in U.K. Impossible to buy fat free foods here. Stock has added oil, even Oatley organic plant milk has rapeseed oil added. Org Rice Dream has added sunflower oil. Are there any U.K retails outlets stocking oil free food items from U S ?

So please, I urge you to consider creating a disclaimer for your program.
This is a cooking show based on a whole foods diet. She is just simply showing you how to make this soup. In the description of her channel she states that she makes recipes based on information from certain books written by plant based doctors. No where in this video is she giving specific nutrition advice. Do you want every cooking show on RUclips to have a disclaimer that they are not dietitians???

I just watched a video on a substitute of miso paste and chickpeas mashed together then dehydrated to be flaky.
and she was smart enough to know to use WILD RICE. instead of regular arsenic rice.

I’m sure it could but I would still wait to add the rice once the rest is cooked. I would try pressure cook for 15 min. 👍

I cannot understand why you wouldn't use any fat to sautee your veggies, fat helps develop flavour tremendously. In the winter you need fat anyways !
