    Just wanted to come back to this video and say THANK YOU Marion! I cook this meal almost every other week for the family and they really love it. It’s super delicious & easy to make. I like to add onions & ginger to enhance the flavour & aroma :)

    I made this tonight for dinner! Oh me oh my, the glaze is soo good! Super simple, yet super awesome!
    At first I was getting worried, because it looked too light brown, soupy & bland (like adobo [I'm Filipino]); but it just needed reduction.
    Took me 25-30min to reduce it to get a caramel glaze I liked.
    I also used a little palm sugar (along with the brown sugar), since I had some around.

    his glazed method is called “Kho”! as a fellow vietnamese person, this is my absolute favorite method of cooking my protein (: this also works with pork and fish

    Fantastic version of ga kho aka chicken with caramel, it's such a great comfort food, lots of flavours going on in the mouth and just moist and tender chicken also love this sauce with Murray Cod or salmon. Thank you for the video!!

      @@breejames6323 it's more of a savoury caramel, not extremely sweet but it balances out with the fish sauce, garlic and natural flavour of the protein you are using. It's a subtle sweetness

    I just followed your recipe; however I added serrano peppers instead of red peppers for more spice and it was delicious. My roommate was stunned at how delicious this dish was. I served with rice pelaf. Thanks for your wonderful recipe. Definitely trying it on my next date.

    Made it last night and as I didn't have the same ingredients so few changes in the making, still wonderful. Instead of brown sugar, I used palm sugar, Basil instead of cilantro, and flake peppers instead of fresh chile, and added them to the sauce so it was spicy and less dark. Finished the asking under the grill as I like it crispy. Thank you Marion you are so wonderfully talented.

    I love how you tell views to never throw away fat! I keep my off cuts and freeze them until I need some fat to render down to impart flavour. Same with prawn heads, bones and carcasses. Honestly, my freezer looks Dexter-esque sometimes but I always have stuff on hand to whip up stock when I need it. Congrats on your new edition and I hope you are all doing well!

      Me too! I have a jar of bacon fat in the fridge, and baked off chicken fat in a baggie in the freezer. Shrimp tails, fish bones...lord.

    You can also use some Tomatoes,
    Tamarinds or some Limes (when you've done cooking) for the Sour tatse. If you use Lime, some time you will get the bitter taste but it's fine. Tamarind is the best because it's work very well with the sweetness and smell really good. We often use this sauce for Pork Ribs.

    Coconut water isn't something I normally keep in my pantry. I'm thinking I'll try simmering a quarter cup of coconut in a couple cups of water and straining it. I'm fairly confident that will do well enough without anyone having to make a trip to the store. I'll let you know how it works.

      Coconut water and coconut milk/cream are totally different. However, you can just use coconut milk/cream...it'll just give it a richer flavor (I've seen Viet recipes using the coconut milk/cream before). Or just use regular water instead of coconut water...but you might need to adjust with a little more sugar since natural coconut water has a little sweetness to it.

    Thanks Marion used this recipe as a base and subbed in ingredients I didn’t have. Ended up with garlicky, sweet, salty chicken breast in more of a sauce cause I had coconut milk instead of water.

    Talking about French people and pan sauces, Caramel pork is a VERY popular dish in France. I remember introducing it to my British wife and she was blown away, saying she'd never heard of it...I was quite surprised since it's such a "common" dish in Asian restaurants in France.

    Just made this tonight.... substituted cilantro instead of coriander.. didn't have fish sauce either...so I mixed oyster sauce with teriyaki...turbinado sugar instead of brown sugar... added peppers n onions and spring onions. ..I went innnnnn 😅🥰

    I made this dish tonight to enjoy with your Asian veggies recipe and it was very good! I ended up using more coconut water and fish sauce to keep the chicken simmering longer. If you have the time, pair this with some cilantro (coriander) and lime rice. Pairs so well. 💜

    This was really pretty amazing, even with skinless breasts. So simple....really amazing how much flavour can be had from caramels. I did finish it with a hint of sesame oil, because...sesame oil!

    Thighs are by far the best part of a chicken. Way more flavor than breasts and they don't get dried out even if you over cook them.

    Marion since we’re on lockdown and can’t go out to buy coconut water, can we just replace it with water? Or do you recommend something else.

      I'm thinking the same. Im Making this today, going to replace the coconut water with some light chicken stock. Should still be good 🤷🏼‍♂️👍

      If you have coconut milk on hand that can work too (I've made the earlier version of this before and it worked great, there is also another youtuber with a very similar recipe that used coconut milk)
      But if you don't have either on hand water would work too

    Just made this properly (last time tried it with chicken breast and it wasn’t as good) and just love this recipe! Salty, sweet deliciousness. Next time I’ll season my chicken a little less so that’s it’s not too salty but love the glossy, thick texture of the sauce. The cooked chicken thighs really do retain that juicy goodness.

    Vietnam was a French colony for quite some time, so not suprised they've got a few nice pan fried dishes.
    The coffee and bread culture in Vietnam is also based on the French way of doing those.

    This is one of my go-to menu choices, whenever we head out to our favorite local Vietnamese restaurant for dinner. Now I can make it at home! The only difference is the restaurant calls it 'Clay Pot Caramel Chicken,' and it comes to the table in a ceramic bowl with a lid and includes some additional vegetables. Can anyone tell me if this is the same dish, or am I confusing this with another well-known Vietnamese specialty? Thank you. Either way, Marion, this looks really delicious!     made it for dinner, just happned to have everything I needed in the fridge or pantry, such a yummy Saturay night isolation dinner... family loved it... so simple... will now be a staple, our cutlets didnt have skin, but they were delish... my son doesnt like cucumber but had his with diced apple and loved it. THANK YOU.

    Thank you for the recipe Marion. I have tried this recipe. Your recipe is delicious and moist and I like it. It is a bit sweet for my liking so I add a tbs black vinegar. and it is still okay. This is the first time I use coconut water for cooking the chicken. I usually use sweet ketchup manis. Good to know different way to cook my chicken..:)

    Hi Marion.. Im from Borneo Sarawak. What can i substitute for the fish sauce and coconut water? Its not possible to go out during this covid 19.. We are currently having restrictions movement order. So stay at home it is.. .

      fish sauce = any salty sauce, stock powder, salt
      Coconut water = flavoured water, stock, water
      You may only have salt and water but you could use aromatics to bring more flavour to the dish. Good luck :)

      Really? In Australia I dont remember the lock down prevent you from doing your grocery shopping? Aslong as you follow the social distancing, wear a mask, wash your hands, don't touch your face, wash your grocery, maintain good hygiene and don't hang in crowd and you should be fine.
