We made this the other night with some modifications: we actually had black Chinese vinegar and we smoked wings on the grill with pecan chips instead of baking. It was divine. Thank you! I love how simple and impactful your recepies are. Can't wait to try more.

Well Marion - another amazing recipe from you. I used some Chinese wine (didn't have the one you recommended) and a dash of apple juice... I found the Sichuan peppercorns and absolutely love them! And these wings are going to be my go-to wings from now on. Amazingly yummy!
Are you sure your Chinese wine isn't the one she mentioned? It's the default Chinese wine, the one you'll need for most recipes, and probably the most essential Chinese ingredient after the soy sauce and the one you'll find most easily in any Asian shop or aisle. Check the label for any of these terms: Shaoxing / Shao Hsing / Hua Tiao. Shao Xing is the most common term you'll find (there are bottles that just say "Chinese cooking wine" in some Western supermarkets - so check the small print on the back of the label if needed). The bottle usually has a red label. Marion's one is light blue (in case you've seen it in a shop), though it looks kind of turquoise on the video. I know your comment's old but in case anyone needs help.. :) I've been there too lol
I love Kung Pao (always make it myself) so I'm definitely trying this! Looks amazing. Btw did you toast the peppercorns first or not? I've noticed people always toast them first but I'm not sure if it's essential. I bought ground Szechuan pepper once but I can't find it anymore so I'll have to grind/crush it myself in the future.
