    I made these yesterday and they really were epic, the spice level from the gochujang was perfect though for people who can’t handle spicy foods I’m sure you could cut down the gochujang and up the ketchup equally. Buns turned out amazing , this recipe is a keeper 🌟

    Don’t go to the website, here’s the ingredients:
    Bao buns:
    360g (12.6 oz) plain (all-purpose) flour, plus extra for dusting
    1 tsp baking powder
    1 tsp instant dry yeast
    35g (1 oz) white sugar
    35g (1 oz) vegetable oil, plus extra for greasing the dough
    180g (6.3 oz) warm water
    20ml milk
    vegetable oil, for greasing
    Fried chicken:
    4 large chicken thigh fillets, cut into bite-sized pieces
    2 tsp sea salt
    ¼ tsp ground black pepper
    1 cup corn flour (cornstarch)
    vegetable oil for deep frying
    1 tsp sesame seeds
    thinly sliced cucumber, to serve
    Sticky sauce:
    1/3 cup soy sauce
    1/3 cup sugar
    2 tbsp apple cider vinegar
    2 tbsp gochujang*
    2 tbsp tomato ketchup
    3 garlic cloves, finely chopped

    The sauce is like a Korean-style buffalo sauce! But personally I'm like all why take such a long time brushing chicken and risking some being sexy-sticky-sauce-less, when you could put a lil to the side to brush the buns and toss the chicken in the rest? Or as I prefer with my buffalo wings, is make the sauce last and whilst on a low simmer, stir thru the fried chicken and then your filling is warm too! 😍👌🏼 OK so now I'm starving and it's like past 2am here in the UK and I'm like contemplating frying chicken at this hour, thanks so much Marion 😭😂🙈

    QUESTION: how long can you make these buns in advance?
    Meaning, can you prepare the buns on a Saturday morning for an evening dinner with friends or will they have changed into cardboard buns after a few hours?

      good luck keeping them half a day without eating them :D they are very tasty :D but if you manage and keep them in fridge then honestly they were tasting delicious anyway :) but keeping them in the fridge without stealing a couple each time you pass is hard :D

    it is really important that you make the dough 1cm high, if not it will be soggy
    plus, flatten them gently before you cook them
    i have made 4 times this dough already, all of them perfect, the fifth, was too thin and i forgot to flatten
    make sure you do these steps

    Trust me on Marion's home made Bao Buns. Have made the dough 3 times now and yet to fail (I would go as far to say it's fool proof). Much better than the frozen kind. I'd suggest having a glass of red with the kneading as, yeah it's a bit of work, but well worth the result. We had a heap left over with one lot after cooking them. Froze them and then 5 minutes in the steamer, still as good. Indeed every recipe we have tried from Marion has been insanely good. That Chilli Oil recipe is now a standard across my family. Thanks legend!

    Oh, I've never seen anyone roll out the whole dough and cut out circles either. It seems wasteful. I really didn't think they'd turn out when I saw you rolling those circles flat either! 😱This technique is exactly the opposite of what I learned!

    I just tried that recipe and it is perfect. I need some practice shaping the baos but i am optimistic :) Thank you so much for introducing me to gochujang!!! The noodle soup with gochujang is a staple in our house :)

    Hi Marion, I'm going to make your bao recipe. Unfortunately, I can't eat spices now but no worries coz I will let my friends have it. I'm sure they'll enjoy it. I'm thinking for another fillings too like pork asado/adobo filling as I can just add whole peppercorns & take them off before eating. Thank you for sharing. I love your recipes.

    Never been this happy to own a steam basket till now! Those look incredible ( and actually do-able!).
    I also really appreciate that you taste the food in the end, so many people make nice videos and the food looks delish but they never taste it so you can't see the joy of that, so sad haha.

    In Malaysia, we have something similar to this called "Burger Malaysia", except the filling is anchovy sambal served with cucumber slices. And the bao is let rise and fried.

    Looks amazingly delicious 🤤. Is there anything you could suggest to replace the Korean paste for the sauce - I live in South Africa and there is no ways we can get something like that here?

      Sriracha maybe? It wouldn't have that subtle funky flavour nor umami but still spicy. Or, personally I would suggest omitting the gochujang (chilli paste) completely then adding a bit of oyster sauce and honey to the mixture instead. Add chillies, dried or fresh, if you want some kick. That makes a great glossy sauce and it's another popular option here in Korea :)

      I’ve tried sriracha with ketchup and found it to be an acceptable substitute to gochujang.

    Looks beautiful! But sadly, the excitement and happiness of eating those only lasts until you look up and see your siblings finishing up their seconds and thirds, clearing the plate, during those moments of you relishing your first and last serving. Canny cooks should hide several helpings from ravenous hands.

    Made these tonight. I have never cooked from a RUclips recipe before. I admit I was a little unsure but Marion clearly knows what's she is doing Quote from my other half
    - 'best thing you ever made'. I was so impressed how they turned out. I need to work on improving the shape of the buns but that did not take away from how very tasty they were. Two hours have passed and I am still thinking about them. The cucumber works surprisingly well with sauce. A huge thanks for the recipe. Loving your work Marion.

    Made it yesterday and they were delicious. I was skeptical about the dough not having salt in it but the buns were good, light and fluffy. Next time I will add a little bit of salt (just my preference). I substitued gochujang for sriracha as I didn’t have on hand. I bet with gochujang the sauce will be more delicious.Thank your for the recipe and the explanations.

    I don't know if you were inspired by the Chinese dish "Lotus Leaf Cake with Braised Pork"(荷叶饼夹肉)With all due respect, in my eyes, your version is just replacing the minced meat with Korean fried chicken. ...... really nothing new...this 荷叶饼夹肉 has been popular in China and Taiwan for ages...

    Chicken also was good, but I made an air fried version.
    Tasted yummy with the sauce.

    Looks really nice !
    Can be quite better though with a simple step more :
    - Peel that cucumber, and let its slices rest for ~10min in a bit of salt and a splash of rice or kasu vinegar !
    (- And maybe add a pinch of spring onions ?)

    Unfortunately all the nice comments and when you look the recipe there is no measurement for the oil and the dough is a bit watery.
    Also measuring water with 180 gram? Not ml and the milk is 20ml ?? Is a bit confusing or I'm wrong and everybody is really done the recipe with missed measurement!
