Vietnamese Caramel Ginger Chicken

- Vietnamese caramel sauce is a popular sweet/savoury used in Vietnamese dishes. Here, it's used for bite size chicken pieces that get coated in the glaze with a generous dose of ginger. It's quick, easy, something different and outrageously good!
Recipe adapted from Eat Like a Viet cookbook by Jenny Lam, after eating this at PhatLon, her Vietnamese restaurant in Perth.

Note to self...careful with browning the sugar...if accidentally burned, it might be a little bitter...I garnish with toasted sesame seeds, chilli and chinese parsley.

Ingredients:
Chilli
Ginger
Chicken
Fish Sauce
Sugar/honey/Maple Syrup
Method:
Cut chilli and ginger.
Marinate slices of chicken in chilli, ginger, and fish sauce.
Heat pan, heat oil after a few minutes.
Add your sugar and caramelise.
Add chicken and saute for 15 minutes. ❤️🙋♀️

I tried this recipe on Monday night. I marinated in fish sauce. And whilst I was frying it it started to smell like someone’s asshole. My whole flat complained of the reeking smell.
I did make this, it was too blond looking, tasted good, but if I would of continued to try and get it nice and dark, it would’ve burned. Not sure what I did wrong
