    500g Chicken thighs
    2 garlic cloves
    1 thumb size of ginger
    2 small shallots
    3 tbsp fish sauce
    2 tbsp brown sugar
    1 tsp white pepper.

    I had some chicken thighs in the fridge when this was posted, so that was dinner planned. As Jeremy says, this recipe is simple and boy is it tasty. I had some Tenderstem Broccoli in the fridge too, so added that in. It's a winner, thanks Jeremy!

    Made this tonight and it was gorgeous. I used brown sugar. The only downside was the smell of the fish sauce (smells like feet). Whole house smells of it now. I've never cooked with it before. The taste was amazing though.
    Others have commented that it would be too sweet but it really isn't. It was perfectly balanced.

    Slices orange carrots(glazed) and Chinese snow peas might add some spark to this already savory dish

    Do you tenderize the chicken in baking soda and corn starch first?

      I think no need coz chicken is easy to tenderized with heat

    My conclusion with this recipe is :
    I tripled all the individual ingredients and used bone in thighs. It's too fishy without kale . Adding a bunch of cooked kale made it excellent.
    And go a little lighter on the white pepper if your not a pepper nut.

    Too much sugar. Instead of sugar i would prefer Red chilli sauce which is not too hot or too sweet. When you say ginger chicken, ginger should dominate the taste not sugar.

      Palm sugar is also not as sweet as cane sugar.

    Hi. It's a cooking myth that searing meat stops moisture from escaping. Searing is done for flavour and caramelization and colour. otherwise, looks like a sound recipe I'll give a go.

      Then the flavor wouldn’t be balanced. It would be overly salty and acidic. If you like that go for it. Otherwise m add the sugar.

    I've always wondered about the measurement 'thumb size'. How much is that really. Hands can vary in size enormously! And is the thumb counted as being from the knuckle, or the whole damn thumb?!!!! It's such a bad unit of measurement it's almost American! So, how much is 'thumb size' in grown up measurements?

      We don’t really measure. We just go by what our parents and grandparents taught us. But if you must know, it’s roughly one inch.

    Would be good if you did add in a pinch of Salt and one deseeded Chilli, it will make it nicer. The fish sauce is not salty enough.
