Fantastic General Tso's Chicken Chinese Recipe!

- The fact that the exact origins of General Tso's Chicken are unknown doesn’t stop it from being so damn popular. Jeremy’s take on this classic recipe promises deep chilli flavour and seasoned chicken, fried to perfection. Trust us when we say this global favourite really is TSO good (sorrynotsorry).

Ingredients
300g chicken thighs
200g corn flour, seasoned with 1/4 tsp salt, and ¼ tsp pepper
10 dried red chillies
5 slices ginger
2 cloves garlic
The Marinade
1 tsp sesame oil
½ tsp sugar
1 tbsp light soy sauce
1 egg
The Sauce
30g sugar
1 tsp siracha chilli sauce
1 tbsp sweet chilli sauce
1 tbsp oyster sauce
½ tbsp black rice vinegar
1 tbsp light soy sauce
½ tsp dark soy sauce
200ml chicken stock

The recipe is a good one, my wife's favourite, with regard to the knife skills, If you watch carefully when slicing the ginger, you were trying to go fast, but missing the ginger several times, good knife work is about efficiency not just speed.

Questions: what kind of oil did you use to fry the chicken?
How and what do you do with the oil after frying? What do you pour it into for disposal? How or where do you dispose of it?
My wife and I appreciate how you talk through the ingredients to get a better understanding of the flavor they provide. As you can tell from the questions, we are just beginning our journey into Chinese cooking. You appear to be a great teacher for that.
Lastly, if you don’t have a video on your channel for a spicy dish with thin crispy fried noodles with pork or chicken, or both. And a really good sweet and spicy sauce.

Just made this tonight, it was delicious. Had to use fresh birds eye chili instead of dried so it punched a bit of heat, but better than 90% of takeouts easily!

this is far and away the best recipe i've found on youtube for general tso's chicken. i surprised myself by how good it tasted the first time i made it. i threw in some szechuan peppercorns alongside the chilis when the recipe calls for them to hit the wok - was a nice additional flavor
I've never actually looked into cooking General Tso's chicken. Thanks to this video, I don't need to look for any other videos. Really good explanation on the process, and now I'm going to have to look for some of these ingredients locally.

Daaaaamn, that is sad... The restaurant near my house cooks the chicken and then leaves it on a hot plate until its overcooked to death.
Made this tonight... amazed by the freshness of it... had to duck out and when I came back I could smell the dinner all the way down the building hallway... just made me hungry all over again...

If it's soggy after frying, then you might be overcrowding the wok and the oil is cooling down too much. Try frying in smaller batches!

OK. I've had this dish on both coasts and its never been my favorite. For some reason, I saw this video, went out and got the few extra ingredients that I didn't have, made it and now, finally, I understand why this dish is so popular. Just the best recipe--not too sweet, not too glumpy. I ate the whole batch. Deep frying is sort of a pain so next time I'll made a huge pile and invite friends over. Thanks so much!

I love meats that are doubled fried, so much better, and when topped with chopped scallions. WOW! It seems to add a added touch of care with the crunch.

i screwed up my first attempt at general tsos, ill be trying this one though looks much much better than the other recipe i used (ginger pieces are too large for my taste though, will be dicing them) - thanks school of wok!
Dragon Ramsey "WHERE IS THE SOIII SAUCE"
Great recipe! Best I've tried so far. However, there are a few things I changed that improved the quality of the dish. 1) . The amount of sauce you use in this recipe is only enough for a small serving and will only feed one person. For a two-person sized meal, you need to double the sauce and use about 1.5 lbs. of cubed chicken thighs. 2) . I personally found the sauce to be a little too strong for my taste, so I reduced the amount of of oyster sauce and sugar by 25%. For my double portion sauce recipe, I used 3 tablespoons of granulated sugar and 1.5 tablespoons of oyster sauce. The glaze was no longer bordering on being too strong. 3) Instead of cooking the garlic and ginger in the pan first, I just added the finely chopped garlic and ginger to the sauce mix and stirred. 4) I found that adding the 200ml of chicken stock, boiling it down, removing the sauce, then re-cooking it to be too time consuming and cumbersome. I instead added 4 tablespoons of chicken stock to my double serving of sauce, mixed thoroughly, then poured it in a hot wok with a small amount of peanut oil. I allowed it to boil down at medium-high heat for about 1-2 minutes, just until I could notice that it was thickening. I then added my 1.5 lbs. of fried chicken thighs and tossed it until everything was covered.

You did finally help me to empty the big 10 liter gas bottle that was mountet to the gas burner beneath the actual wok. now I'm ready to purchase a small gas bottle 😊 that fits better in my kitchen. For the iron thing out of wich are coming red/blue colored flames I payed 12 bucks at the pacific store in Malaysia and it's now 17 years in use!

And yes, I have talked to my neighbor. He knows he is not suppose to have a rooster in our city. He is a complete jerk about it.
Nailed this on the 3rd attempt. left the recipe as it is... the key to this is really fast deep frying and reducing the sauce by just about the right amount... both are tricky... However when you get it right... its a great recepe... thank you very much for these great videos.... they take a bit of practice but forces one to learn which is great...

Made this today and came out perfect! One note: I did have to add cornstach to the sauce to thicken it up towards the end. Othewise on point and super yummy. I like it even better than kung pao chicken.
