This is my diy chicken and rice fantasy come true! I was a little heavy handed with the sauces so I added a bag of quartered brussel sprouts. I also used the white onion sitting in my fridge. It was delicious! I will remake this countless times in different ways going forward. Thank you!

I was going to suggest com tam as well, but you did a similar recipe years ago. How about canh chua...I love both the fish and pork ribs version (the one that uses the fermented mustard greens). Oh, what you don't see often that I love eating growing up is the fried fish in tomato sauce! You should do a whole fish to make it look cool. :)
Chicken breast would be too dry. Traditionally, this is made with a whole chicken cut up, bone-in, skin on to seal in all the juices and flavor. Using chicken thighs would keep it moist vs using chicken breast.
As far as good Viet dishes to make...I don't think you've made bo kho yet and it's perfect weather for it this time of the year. I love dipping that perfect baguette bread into it and side-eye those whom eat it with noodles LOL! but you can show how it can be eaten both ways.

Howzabout bun bo Hue? That might be too complicated for most people, but maybe you can show a more authentic way (with ALL the veggies and herbs...you don't have to add the blood, but at least mention it) vs a short cut way that still tastes good. Aimee's Cooking, Van's Kitchen, Marion's Kitchen (more of the shortcut version), and even Seonkyoung Longest (old recipe but looks super delish) have done it.

In my country (Trinidad), we call it stew chicken. Serve with rice, beans..tasty

In Trinidad, we call this process of browning the meat 'stewing', or 'stew/ed'.
This is similar to a West Indian dish that my grandmother taught me how to make as a child. It's called Stewed Chicken.

You used oil to caramelize the sugar instead of water like some other RUclips channels. That’s how my mom makes it too, I subscribed based on that.
