    Made this two days ago but modified for my Nigerian palette (seasoned the chicken a bit more and added chili flakes after adding chicken stock) and look, it was a massive hit. Simple recipe and amazing food. Thanks a lot for it!

      The wine is needed to deglaze pan of bits of chicken etc , plus if you are AFRAID of wine for religious reasons, the heat boils off ALL the alcohol, leaving the rich flavor .

    Made this without wine and parsley, added coriander leaves instead in last too. The rest I already had in my pantry. My In-Laws dropped by for dinner and they literally licked the bowl. Thanks you for the recipe..

      Yess amen. I just appreciate so much that they’re not 10 to 15 or more minute videos is short simple to the point and beautiful. I never understood why it takes 20 to 25 minutes just to show me how to boil an egg. I don’t need to hear about your whole life that day or whatever just get to the point. Lol

    I made this once, and now it is part of my frequent menu items. Love it every time I’ve made it. I don’t add the basil leaf nor wine because I don’t have them, but it still comes out delicious.

    My family is from normandy and in my recipe I use cider over wine and burn the onions and mushroom first with calvados (local apple liquor)
    A hit every time

      Your recipe looks more appealing and genuine. Reminds me of the way we cook here in Poland. The video seems to show an Americanised version, but it doesn't look bad either, just slightly different.

    This recipe is a 10 of 10. As others I added some cayne pepper and red pepper flakes to it as... My Mexican wife has converted me to needing a spice kick in every meal. Amazing and surprisingly easy and cheap to make! Win win!

      Look, I barely cooked before finding her blog. I started with her chilli con carne and now it's my go to place for recipes. Do yourself a favor and just try some, they're usually really easy to do, and very, very delicious.❤️
      I even bought many Asian ingredients because of her dishes.😂😂 NO REGRETS!!

    I made a chicken fricassee without mushrooms and I must say that its soo good, with only a few simple steps there is loads of flavour , I recommend trying to make this even if you don't have all the ingredients it will still taste amazing!

      I love that aspect of food blogs and shows as well, sort of like the Jamie Oliver style. Amazing what that man can crank out in a half hour with 5 ingredients. Sometimes the less complicated things are, the more people will be inclined to not only cook more but to experiment on their own by just replacing one simple ingredient for another favorite “just to see.“

    My grandma used to make this... whenever I would mention it to other people no one knew what I was talking about. I thought this was one of her made up recipes. Her version didn't have wine or cream... used cream of mushroom soup. This makes me happy as I have the pan she used to make this dish in. I may make it this weekend.

    I made this yesterday with pasta for my mom but I didn't had thyme so I put some chopped culantro and cilantro left it to simmer and served with parsley, she absolutely love it, she even had a second portion with bread, thank you!

      It's shown here served on mashed potatoes (or something similar), aside some greens, but I've always had fricassée served on long french loaf slices. The thick sauce is to die for.

      Yes, soaking up the gravy with homemade bread is the best part. I would double the broth and flour and add salt until you can just taste it.

    I tweaked a little according to my tastes - added a pinch of rosemary, used half a head of garlic which i sautéed first til golden before adding the onion and others aromatics.
    Hubby loved it!

    My brother's mother in law made a version of this when I was little. She came from Cuba and said that this is a Cuban dish. Or a version there of. It is a vivid memory of one of the best things I've ever had in my life and I have been searching for something like it since.

    I generally dislike cooking videos. I really prefer reading recipes to watching them, unless there is a new to me technique or process used in preparation, videos are not usually useful for me. But, thanks to Nagi at Recipe Tin Eats, I have learned that there are cooking videos that are actually enjoyable to watch, no over-emoting "character Chef", no fake bonhomie, no pretension at all. You sent me the recipe, and moved me to try the video.I have already bought the ingredients, watched the video and I'll be preparing it tonight! Thank you again, Nagi!

    I cooked this dish yesterday, left it overnight to let the ingredients get to know each other and had it with mashed potato and green beans. Excellent.
    I was okay putting the butter in at the start, because , after all, it is French, but I could not bring myself to add heavy cream, then sit and watch my arteries harden. I substituted natural Greek Yoghurt...seemed to work, although I had to mix the sauce with it before adding. the full pot.
    Thank you for providing this recipe...thought that a dish with such a posh name would be complicated. You made it easy.

    I made this today, and it was amazing. My wife and I are not big fans of mushrooms, so I substituted them for carrots, but kept everything else the same and it came out great.     This was really good. I made mine without the wine. I also didn't have mushrooms, so I used carrots instead. And I switched the cream with coconut milk. My husband loved it 😍

    My brother found this video and asked me to make it. Had to eliminate wine. Used lemon juice instead and seasoned the chicken a bit more. It turned out perfectly splendid. Thank you for sharing your recipe 😊

      Verjus blanc is another great sub for non-alcohol as it is still derived from grapes. If the absence of alcohol is in support of a former alcoholic then I completely understand. If it is because one is worried about the alcohol content then the alcohol will be simmered off totally in the cooking process.

      @@tomf3150 lemon juice is really nice with chicken but be careful you don't use too much lemon juice or white vinegar as they can cause the cream to split, separate. Also, tests have been done on alcohol used in this way, the majority of the alcohol does evaporate away but not completely.

    I made this and everyone in my family loved it! I substituted the 8 pieces of chicken thighs and drumsticks for 5 tenderloins. I added penne pasta instead so there was plenty of sauce. It also tastes almost identical to this other dish Rigatoni D!

    Pro tip: Mix chicken consome pouder with your salt and pepper for extra chicken punch! Just keep in mind that the consome is usually a bit salty, so adjust your salt accordingly ✌️
    Ultra pro tip: along with the cream, add a spoon of normal Dijon mustard and another one of Dijon with seeds and prepare to be mind blown 🤤🤯

    Rustled this up for the family today and it went down a storm. Skipped the mushrooms and parsley, replacing the shrooms with carrots. It's better than anything Gousto and Hello Fresh have offered in the last 18 months. Looking forward to working my way through more of your recepies :)

    I've been looking for a Fricasse recipe for years ( I only recall the messy mush from school dinners!). This was superb. I loved it. I couldn't modify the measurements for two people so we've got more than enough for today with pasta rather than mash. I ❤ it! Thanks you x

    Tried this recipe did everything except the heavy whipping cream and it still turned out great. Great with mashed potatoes you can use the gravy for the mashed potatoes too😋

      Probably not a heavy whipping cream, probably 15% cooking cream. Adds richness without too much else.

      Its definitely not whipping cream as that contains gelatine, it will be cooking cream but pure cream which is naturally thick does also work.

    Made it this week, so delicious! Fed me for 3 days and the last serving was with tortellini pan tossed in the leftover sauce. Substituted wine with cooking sake cos I couldn't find my wine stash!     I’ve made this recipe twice, modified some ingredients to make use of my small pantry, and cooked this in my cast iron skillet since I don’t have a dutch oven, and it was a blasting success every time.     I made this today but with my own twist seasoning the chicken with salt, pepper, adobo, and red pepper flakes and then instead of heavy cream, coconut milk and it was a HIT! My cousin was mesmerized and complimenting me over and over! 😂Thank you! 🙏

    I've made this for years and never knew it was called Chicken Fricassee. I just called it chicken with white wine and my wife and kids knew what I was talking about. Being from the lower middle class of America in the 1960s and 70s what we called Chicken Fricassee when I was a kid was made with Campbell's Cream of Mushroom soup which created a much whiter, kind of salty sauce without the great flavors and nuances of the butter, herbs, wine and broth in this recipe (not to mention the use of fresh mushrooms here vs the teeny tiny bits of rehydrated dried mushroom in the Campbell's product).
    My dad still makes the Campbell's version from time to time and it's not bad, mainly because it brings back fond memories of my childhood, but there's a reason I came up with this version independently through trial and error.
