Then aftter it's done, let it cool and fill with a pre-cooked filling, such as a lemon curd or chocolate custard. But you can just bake the crust until it's completely done, and omit the egg/cream wash. Although if you want to use it for a 2 crust pie that has the filling baked in with it, such as an apple pie, then you would put the filling of your choice in the bottom crust, then add the filling, then place the top crust on. Now you're ready to crimp the edges of both top and bottom crusts together and bake. Just be sure to cut some slits in the top crust first to allow steam to escape. Oh, and for a 2 crust pie with a baked filling, don't prick holes in the bottom crust befor filling, either.

You work it through the plastic and let it rest in it when it comes together. Try it, 0 mess! It’s genius. I’ve been doing this with all my doughs for decades.
I do that too 😅😅 it's so much easier when you don't make such a mess & I don't have to wear gloves. My hands are super hot so when making pastry I have to wear gloves & they make my hands feel hotter to me. 💖💖💖

I’m doing a peach cobbler today and in the past I’ve baked the crust with the pie, this time I will be partially baking it prior and then letting it finish with the filling. This will make it more sturdy and more flaky. Usually when I make pies the crust at the bottom is gooey.

@@praneetarao this is completely different from puff pastry. Puff pastry you don't mix the butter in with the dough, you put it in between and then fold the layers multiple times.

Instead of using vodka in the pie crust, I use apple brandy or calvados for my apple pies. Gives the crust a lovely apple flavor too! Try other fruit based liquors for fruit pies - Chambourd for berry pies for example.
A E because alcohol doesn’t soak into the flour then quickly evaporates out allowing you to have a wetter dough that comes together better but then the moisture evaporates out quickly leaving you with a flakier crust

Same for me! I'll keep just enough for a pie crust in the freezer, then when I use it I'll replace it with more flour. Keeps it cold and saves time because I don't chill my dough for as long.

I've watched this video, read the directions and I'm still uncertain about how much liquid you add. Are you adding a total of 5 TBLSP of fluid with 3 being ice water and 2 being Vodka? I did this and my dough seems a lot wetter than your shaggy dough that comes together when pushed together.

Both shortening and butter are saturated hydrocarbons. Regardless of reducing a double bond in vegetable oil to make it fully saturated doesn’t matter. Butter just has some water in it. Saying you don’t like shortening because it’s hydrogenated is silly when the end result is the same in the body.
I’ve made pie crust before but this recipe worked the best. I was hesitant about the vodka because I don’t like alcohol but I think adding it made a big difference. Your tips for forming the ring were great. My crust didn’t collapse which is what I’ve always hade a problem with. Kudos on the video and your channel.

Shortening used to be a trans-fat, not good for the heart. However, modern shortening is not and is no more of a health issue than butter. My grandmothers recipe used lard, or a shortening/butter mix which I think is a good option. Oddly enough this recipe is very close to hers. She didn’t use sugar unless she was making fried apple pies.
I tried my hand at making homemade pie crusts last year, I made apple pies out of the apples from my neighbor's tree. I had a heck of a hard time rolling out my dough with it chilled, I'm not very strong, lol. I was literally shaking because of the rolling and trying not to let the butter get too warm and blend into the four dough. The crust still tasted sooo good even though it didn't get very flaky.
Yes, you can. Most pie crusts don't have any vodka (or sugar) in them, so feel free to omit either of them. But if you omit the vodka, you need to replace the amount called for with more ice water.

We omitted the red colouring, lessen the amount a sugar and add chunks of America green apples and a little shredded coconut; it was so yummy (I only had a little of filling, couldn't have the crust), her teacher loved it and she got full marks. I always use your recipe for pie crust with one exception (which was my Mom's), I add 1/2 tsp. of vinegar to my recipe. When I've made it without, my crust seemed to be a little less flaky. I made this without a food processor and it is absolutely amazing. Most flaky pie I've ever tasted and I paired it with his apple pie filling recipe. Honestly heavenly. Although I've learned to use only around 50-60% of the sugar he uses to suit my own tastes.
So, every year I make strawberry pie for Easter and my family loves it. This year, due to Corona Virus, the market was completely out of pre-made pie crusts. 😱 So, I tries your crust because I had all the ingredients at home. I keep my flour in the freezer so that when I make pie crusts, biscuits, cookies or cornbread, the flour is cold and gives better results.

Keeping your flour and flour based foods (ex: pastas) in the freezer also prevents weevils.

I’ve made pie crust before but this recipe worked the best. I was hesitant about the vodka because I don’t like alcohol but I think adding it made a big difference. Your tips for forming the ring were great. My crust didn’t collapse which is what I’ve always hade a problem with. Kudos on the video and your channel.

Shortening used to be a trans-fat, not good for the heart. However, modern shortening is not and is no more of a health issue than butter. My grandmothers recipe used lard, or a shortening/butter mix which I think is a good option. Oddly enough this recipe is very close to hers. She didn’t use sugar unless she was making fried apple pies.
I tried my hand at making homemade pie crusts last year, I made apple pies out of the apples from my neighbor's tree. I had a heck of a hard time rolling out my dough with it chilled, I'm not very strong, lol. I was literally shaking because of the rolling and trying not to let the butter get too warm and blend into the four dough. The crust still tasted sooo good even though it didn't get very flaky.

Yes, you can. Most pie crusts don't have any vodka (or sugar) in them, so feel free to omit either of them. But if you omit the vodka, you need to replace the amount called for with more ice water.

OMGosh! This is just like MY pie crust! Years ago, when I started using vodka, my ‘secret’ ingredient, everyone started complimenting my pies! “This is the only pie that I’ve ever wanted to eat ALL of the crust”.

@@kilroyscarnivalfl yes my daughter's assignment was to come up with a unique pie. So, her idea was to use the filling for Jamaican plantain tarts and change it up a bit. We omitted the red colouring, lessen the amount a sugar and add chunks of America green apples and a little shredded coconut; it was so yummy (I only had a little of filling, couldn't have the crust), her teacher loved it and she got full marks. Is it a 1/2 tsp of salt or 1/4tsp? The recipe on your site says 1/4 but you say 1/2 in the video.
I would use 1/2 tsp if u use all the sugar but 1/4 if use less
I've made this today! Oh my was it amazing. I used it for my homemade lemon meringue pie! The pie crust wasn't so thin it was nice and thick! Just how I like it. This is my new favorite pie crusts recipe!

I always use your recipe for pie crust with one exception (which was my Mom's), I add 1/2 tsp. of vinegar to my recipe. When I've made it without, my crust seemed to be a little less flaky. I really don't know what the vinegar does, but it always worked my my Mom and for me. Have you ever heard of this recipe? If so, let me know what the vinegar is for in making pie crusts? I'm making your pie crust right now to go with your peanut butter pie. I hope my crust turns out. My food processor is too small and I had to dump it all into a bowl to work it and the butter had lost it chunks already. Fingers crossed! But just wanted to say again how much I love your videos. Concise info, some humor but you don't talk "too" much, and you just have a nice overall demeanor. Upbeat but not over the top.

I made this without a food processor and it is absolutely amazing. Most flaky pie I've ever tasted and I paired it with his apple pie filling recipe. Honestly heavenly. Although I've learned to use only around 50-60% of the sugar he uses to suit my own tastes.

This year, due to Corona Virus, the market was completely out of pre-made pie crusts. 😱 So, I tries your crust because I had all the ingredients at home. I have to say, even though it was more time consuming than I like, it was A-M-A-Z-I-N-G! I’ll never go back to store bought again. Thank you for this delicious pie crust recipe! I wish I had watched your videos back during the holidays 😂 I was just starting baking and made a pie dough using my brand new food processor for the first time. I went to mix up the already crumbly dough with my FINGERS and wasn't watching how fast I was doing it, and I sliced the tip of my right ring finger ALMOST off!! I laugh about it now but then I was crying and freaking out lolol. Every time I hear your warnings of that machine, I say "yep, he's right!" 😂
