You could literally learn to cook from scratch completely on Babish's channel, and that amazes me, mostly because it's so comprehensive and thorough. A tip I learned is just brushing the bottom shell with beaten egg before putting the filling in and I've literally never had a problem with soggy bottoms. Blind baking for a double crust just adds a bunch of steps. I've also put the pie on a lower rack so it's closer to the heating element. No pie stone(I'd never even heard of that before now) necessary.
@@Curtis69213 I'd personally classify that as a form of blind baking which is more steps than I'd like to do* but do whatever works for you! *cooking with adhd for me means everything takes like twice as long to get done so cutting down on steps is preferable. on the rare occasions i am baking a double crust pie i usually will be making an egg wash for the top crust anyways so it's not much of an extra step, I'm just brushing it on both crusts instead of one

I'm only 18, so I haven't cooked or baked too often in my life. Pie is the one thing I fell in love with making from the first apple pie I made, so I've kept making it. So far I've made many peach and apple pies, a couple chicken pot pies, and a cherry pie once. I've used the same pie dough recipe from Tasty all these years, but now I can see where I've gone wrong. For one, I'm always scared of blind baking, so I rarely do it, and I get some soggy bottoms. Will do from now on, Babish, at your exact specifications. Second, I stretch the pie dough when getting it into the pie dish. I'll try lifting it from now on. Also, I suck at getting it into the pan in the first place; can't believe I never figured out the rolling pin trick. And last, the butter! My pie dough is usually a bit crunchy and very satisfying, but never nearly so flaky. I think instead of cutting up butter and mixing it in with the paddle on my mixer, I'll do what you did: grate in some ice cold butter, for those perfect, little bits of butter. I actually learned a lot! :D
To avoid cracking the pumpkin pie, my Mom always turns the oven off and opens the door slightly. It allows it to cool more gradually and seems to work for her!
A tip for you Babish. When you are trimming raw dough around the pie plate, “cut” it by dragging the blunt side of the knife in a downward motion along the edge of the pie plate. Much faster.

My mother and I are making pie for Christmas and I reminded her about using tin foil for her pie weight stones. She remembered that I told her about it in Thanksgiving. We docked the crust and lifted the weights from it and she said it was a great innovation.
Quick tip- for the apples, if you don’t have lemon, you can use orange juice (my preference as a child) or even a bit of soda (I used ginger ale once when we were out of both). What you’re really after is the citric acid to prevent the oxidation. Good luck! Also babish, can this pie crust be used for savory pies? Sprite also works to, similar to ginger ale its pretty simple soda as well. Used it for a fruit salad impartes nice very nice but slight taste. Squirt would probably work well to I bet. Don't know though

You should definitely do a multi-episode series based around Thanksgiving building up to the holiday. I know you already have a handful of episodes, but Thanksgiving is always fun so you should do more
my mom's pie dough uses leaf lard, which is handy because it's solid at room temperature and doesn't melt quite as fast as butter. that way you can skip the 30min chill and construct your pie right away without sacrificing the flake. it also allows more wiggle room for beginners.
The lattice pie makes me nostalgic! I remember learning how to do the lattice weaving on cherry pie at thanksgiving. The only difference is we would crimp the edges with a fork after the lattice was done & then brush down with milk & sugar instead of a beaten egg.
I decided to make pie from the pressed blueberries from wine making. It's got a different texture since they have been crushed and I had to add water and sugar, then rehydrate them first before using, but it tastes really good. Plus, it's using something we would normally not eat and we'd just throw it away (and by that I mean into the compost bin). It tastes like a normal pie. More work, but they were given to me for free, so all I had to pay for was the crust so really cheap food. Shame I can't exactly share any this year, but so it goes.
When you put your dough to chill, press it into a bowl to make it a thinner circle. Quick shortcut for the apple pie filling. Birds Eye custard powder, cinnamon, and sugar. Makes an easy filling with the apples.

Got a very rich, crispy crust that slid off the pan easily. Very nice. Didn't have a food processor but a cheese grater works just as well for frozen butter.

You can also get around the problem of soggy bottom by slicing venting slits on the bottom and baking it before adding the filling at 400 for 4-5 mins

Turn the maple syrup into maple sugar and use instead of regular sugar. Thank me later.

A tip for you Babish. When you are trimming raw dough around the pie plate, “cut” it by dragging the blunt side of the knife in a downward motion along the edge of the pie plate. Much faster.

My mother and I are making pie for Christmas and I reminded her about using tin foil for her pie weight stones. She remembered that I told her about it in Thanksgiving. We docked the crust and lifted the weights from it and she said it was a great innovation.

Quick tip- for the apples, if you don’t have lemon, you can use orange juice (my preference as a child) or even a bit of soda (I used ginger ale once when we were out of both). What you’re really after is the citric acid to prevent the oxidation. Good luck!

Sprite also works to, similar to ginger ale its pretty simple soda as well. Used it for a fruit salad impartes nice very nice but slight taste. Squirt would probably work well to I bet. Don't know though

You should definitely do a multi-episode series based around Thanksgiving building up to the holiday. I know you already have a handful of episodes, but Thanksgiving is always fun so you should do more
my mom's pie dough uses leaf lard, which is handy because it's solid at room temperature and doesn't melt quite as fast as butter. that way you can skip the 30min chill and construct your pie right away without sacrificing the flake. it also allows more wiggle room for beginners.

The lattice pie makes me nostalgic! I remember learning how to do the lattice weaving on cherry pie at thanksgiving. The only difference is we would crimp the edges with a fork after the lattice was done & then brush down with milk & sugar instead of a beaten egg.

I decided to make pie from the pressed blueberries from wine making. It's got a different texture since they have been crushed and I had to add water and sugar, then rehydrate them first before using, but it tastes really good. Plus, it's using something we would normally not eat and we'd just throw it away (and by that I mean into the compost bin). It tastes like a normal pie. More work, but they were given to me for free, so all I had to pay for was the crust so really cheap food. Shame I can't exactly share any this year, but so it goes.

Got a very rich, crispy crust that slid off the pan easily. Very nice. Didn't have a food processor but a cheese grater works just as well for frozen butter.
