That can be achieved with any form of squash.
I recommend some butternut squashes, after processing them as Babish had done with the pumpkins, put the mess into a soup pot, with some chicken/veggie/turkey broth at your own choosing, add sauteed onions/celery/mushrooms, and after blending everything with a handheld blender, add spinach leaves with salt and pepper to taste.

I love Charlie Brown Thanksgiving because it has a great message. We always get these ideas in our head that holidays and especially holiday meals have to go a certain way. We HAVE to have turkey, or cranberry sauce, or deviled eggs, etc. But this movie reminds us, what matters is being with loved ones. Charles Schulz was a genius man.

Pie dough rolling tips: Pack the dough very tightly in a THIN disk before you chill it. This helps prevent cracking later on. Let it rest for a few minutes when you take it out. VERY cold dough will crack. Just don’t let it get too warm. Also, it helps to smack the disc with the rolling pin at first to get it started. Then roll as usual.

Thank you. I made a butter crust for a pecan pie this year that came out terribly due to the recipe I followed, which recommended cooking for 75 minutes, so the whole thing was desiccated. But what I really wanted to say is that I am dough challenged. I am definitely gonna use my big food processor next time + follow Andrew's method. And I might try that pumpkin pie, which looks FANTASTIC.

A couple tricks for the next time you make it:
    - After you blind bake your pie crust, brush the inside of it with a beaten egg, then throw it back in the oven for 2-3 minutes so the egg cooks. This will create a moisture-resistant layer which keeps your crust from getting soggy too quickly.
    - You can prevent the cracking in your pie by cooling it down slowly. Turn the oven off shortly before the pie is done and crack the door of the oven open with a wooden spoon, leaving the pie in there until it cools down.
