  • My favourite thing to can and most definitely my favourite canned food to eat!
    I love roasted peppers 🌶️ We eat them fresh as much as possible and for when we can’t…I make sure we have them on our pantry shelf to get us through the winter.
    They taste DELICIOUS! I prefer mine with more oil than vinegar but I will explain the variations you can do to make them how you enjoy them!
    An easy water bath canning project !!

    Good morning! Your canned peppers look and sound so delicious! I will have to try that one of these days. We love peppers of all kinds, except I can't handle the hot ones. I have never canned anything in oil and really have not ever done any waterbath canning. My pressure canner does have that feature as well, so maybe I will get brave and try it. We finally got rain Friday and early Saturday morning. It was a very light rain, but we are so thankful for it. We have more in the forecast this week, and we are praying it happens.       Good morning Carolyn 💜 We don’t do hot peppers either, ever!! Another reason I love canning..I can make everything to our own tastes (and heat level 😉)
      We’ve been enjoying cool weather but now it’s going back to hot for awhile.

    Thanks for sharing. Great how to on roasted peppers 🥰and they look delicious 😋 I was curious if you have ever made and have a video on using zucchini to make salsa? I have a recipe for making zucchini relish that I can tweak but thought I'd ask you in case you have made before.

      Thank you 💜 No I’ve never heard of using zucchini for salsa but sounds deli! I’ve made zucchini relish before and it’s good but it’s not something we use very often…

    After seeing living traditions homestead rave about these peppers, I could t find them in Canada so ended up ordering from baker creek, I am growing them next year. Thanks for sharing 🇨🇦🌷

      That’s where I had to order from too but since the first year I save the seed from year to year…free seeds 😄 Baker Creek does have top quality seeds, you won’t regret it!

    Thank you for such a beautiful and informative video. I have already subscribed to your channel.
    Several years ago, I tried a recipe for what I call "grown up" pasta sauce, because it calls for roasted peppers in the sauce and just takes the sauce to a new dimension. Store bought roasted peppers were disappointing...too much vinegar and an off taste from all the other stuff that was added. So I have been looking for a way to preserve roasted peppers to have them more readily available for sauce and use in sandwiches and other dishes - it just doesn't make sense to roast 2 or 3 at a time when I could be taking advantages of sales and farmers markets (I can't get them to grow in my garden) and filling a tray or two to roast instead.
    Your method of preserving with oil and just enough vinegar to make it all safe sounds like the perfect solution and will let me and my family enjoy roasted peppers more often. Can't wait till the next growing season...or great?? grocery store sale.
    I have tried cutting the peppers in pieces before roasting as well as leaving them whole and have to say they are much easier to handle when left whole for roasting. You made it look so easy.
    Love the tip of making sure to use the meatier varieties. It definitely makes a lot of sense.

      Hi Carol, I am so very sorry!! I just now saw your message and I feel terrible not to have responded earlier 😞 I completely agree about the store bought peppers…for my tastes they have way too much vinegar (I want to actually taste the pepper). And I have yet to find a small jar that suits my needs. There is absolutely no comparison to home canned peppers!

    It's a toss up now which I want to try next year, the adjvarski (spelling??) or the cubanelle, I don't have room for both so I have to choose one but they both look great, but I would like to try them roasted like that! This year I tried the heatless jalapeno and they didn't taste much different than the green bells I grew so won't bother with them next year. You are a great teacher, thank you for sharing!

      Thank you Carmen 💜 You only need 1 or 2 Cubanelle plants because they produce a lot per plant then you can still grow the Ajvarski!! I was disappointed in the Giant Acon…(?) I got from Baker Creek. They didn’t get nearly as big as they were suppose to. Nice peppers but they’re just regular green bell peppers ☹️

    This looks delicious! Does the oil in the jar solidify once the jar is opened and refrigerated?

      Thank you 💜 No not really at all. You may get a teeny tiny bit at the bottom of the jar but that’s also from the juices of the peppers

      When they are pressure canned they should last 18-24 months on your pantry shelf. Let me know how you like the soup 😀

      I originally got mine from Baker Creek (Rare Seeds) but I save seeds every year. They always have them in stock I think 🤞

    Hi, so I'm told it's a cardinal sin to can anything with oil. Does this work for you without issues? I'm excited to see that this can work. 🎉

      Hi Maggie, I’ve been canning this for four years and I’ve never had an issue. The peppers (jars) never make it past a year - year and a half because we eat them so I can’t speak beyond that point. I’ve never had a seal fail or the contents go bad. They’re delicious like the day I canned them 😋 BUT I always recommend that everyone should do what they are comfortable doing in their own kitchen

      @JustTheTwoOfUsHomestead thank you so much for your prompt response. I'm a cosmetic chemist and I'm learning that food and cosmetics are pretty similar as far as "rules" go. If you're making a serum with no water and only oil, it requires no preservative. It's so interesting to me. Thank you for your lovely video. I'm going to give it a try! If it contains botulism, I'll just shoot it into my face! Win win😅
