So here's my tip on how to peel your peppers. When you take them out of the oven, put them in a bowl and cover them with a plastic wrap or plate and leave them until they are completely cool. The steam and condensation that will happen in the bowl makes them easier to peel off once they are cool. :)

I've been looking for a roasted pepper recipe for blending with hummus, so this is perfect. I think I'll leave the skins on since the whole thing is getting blended either with an immersion blender or with a regular blender. I'm thinking it will turn out great. :)

I roast my peppers over the flame on my gas stovetop, then put into a paper bag to cool, peel and seed under running water. I really enjoy these ladies videos!

It the sides off and put skin side up on sheet pan under broiler then put in covered bowl to steam skins right off..WAY easier and less messy than this way...

Marinaded them in an approximation of the spices - I had an Italian mix that approximated. Then left them in a Tupperware container in the fridge and wow they are good. One of my favourite recipes and I will be out getting some more peppers to make some more for a party on Saturday.

I personally blend a whole roasted red pepper (and it's juices) with a tablespoon of tahini, splash of plant milk, splash of water, garlic powder, onion powder, lemon-pepper, and nutritional yeast for a creamy Mediterranean sauce to serve with my homemade oil-free falafel!

3 Tbs red wine or balsamic vinegar.
2/3 cloves garlic.

The flavour isn't in the skin but the texture is really unpleasant compared to the soft flesh. It's also how they are canned.
