So here's my tip on how to peel your peppers. When you take them out of the oven, put them in a bowl and cover them with a plastic wrap or plate and leave them until they are completely cool. The steam and condensation that will happen in the bowl makes them easier to peel off once they are cool. :)

I just made this with one each yellow, orange, and red bell peppers and served over spaghetti squash, with steamed kale and oyster mushrooms on the side. Added a bit of fresh garlic, minced and some black pepper. I don't know if I'll ever make a traditional marinara again! LOVE IT! Thanks gals, love your videos and food!

This is now what I put on my (whole wheat) spaghetti in place of marinara. Is awesome and amazingly sweet. I also added a chopped roasted onion quarter. Thanks every time.

I've been looking for a roasted pepper recipe for blending with hummus, so this is perfect. I think I'll leave the skins on since the whole thing is getting blended either with an immersion blender or with a regular blender. I'm thinking it will turn out great. :)

I love a slice of roasted red, yellow, or orange pepper on a veggie burger. It's great flavor and a sort of visual and textural substitution for that slice of cheese that used to be there.

Saw this yesterday and this morning I roasted five red peppers in the oven while doing some clearing up. Let them cool while I went out. Marinaded them in an approximation of the spices - I had an Italian mix that approximated. Then left them in a Tupperware container in the fridge and wow they are good. One of my favourite recipes and I will be out getting some more peppers to make some more for a party on Saturday.

Why stop there with the red peppers? There's so much more you can do with them! I personally blend a whole roasted red pepper (and it's juices) with a tablespoon of tahini, splash of plant milk, splash of water, garlic powder, onion powder, lemon-pepper, and nutritional yeast for a creamy Mediterranean sauce to serve with my homemade oil-free falafel!
