To me i waterbath everything. I feel PC takes out the nutrients are cooked out. The feel the US wants us to do what they want and we are the only country that has more chemicals in our food you buy from a store. We have no idea whats in it. So my thinking they want you to depend on what they do. More people are sick than they were back 30 years ago. I drink raw milk, i can waterbathing and my husband and i have no health problems. We havent even had a cold. I cook everything fresh. We buy our meat from a local farmer i plant all my veggies. So we only buy at the store paper products, and soaps. I make my own cheese, cottage cheese. Thank you for keeping the way i grew up alive and well.! God bless you!

Thank you for keeping tradition/the old way alive. Most countries consider pressure canners dangerous and do not even sell them. Only in the US do they "insist" you do it their way by pressure canning. I appreciate your videos, it always helps someone who can't find anything about water bath canning without being pressured about going out and spending a fortune when it's unnecessary. In return people don't do any canning because of cost. That's exactly why the government insists on PC. They don't want you prepared, or keeping family tradition. Thank you!❤

I followed your video last year and I put them in just half- pint jars I was recovering from spinal fusion and I put them to grow in flower boxes so I could have a garden. I realize it wasn't much but I had to have a garden. It worked for me. But the canning worked wonderfully. Made a stew yesterday out of the potatoes, yellow beans, carrots, parsley, my canned mushroom soup, hi onions and I needed celery took a trip out to garden took three little stalks cut up the leaves to and threw it in. It's so nice that all veggies was grew and came from my garden. By showing us how to do this preservation it puts meals away for us. Thank you.
I appreciate these videos a lot. Last year I started canning for the first time, all by water bath. Your videos helped tons... There isn't much water bath info besides fear stuff. I'm still eating from those jars from last year, and I already harvested and canned another years worth (at least) of green beans, along with carrots, potatoes, and corn. Now I'm dealing with an abundance of tomatoes, so time to can those for the first time. Also learning about fermenting. It's all a fun learning process. Thanks again and God bless yall.
Every time i have Pressure canned beans they tasted strong. And i 18:13 stopped caning for that and other reasons. I'm 78 and had water bath canner that was tall with two racks . Put water in the bottom, put the filled jars on the racks and let cook for about 3 hours. I plan to water bath this summers beans. Thanks for the info ❤

I used to pressure can green beans. I wasnt happy at all with them. My mom told me that her mom, my grandma, only water bath canned everything! They lived on a farm and Grandma needed to feed 10 kids AND provide the food for her restaurant! Nobody got sick and the beans were so much better. This year was the first year i didnt do pressure canning for my grean beans or my corn. The color was beautiful and the veggies were crisp and fresh! I'll only waterbath veggies from now on.
I want to add that I still boil my lids. They changed that part of the instructions a few years ago; also the lids and rings are cheap and can bend. I still use my old rings even if they have rust on them. I sand them off but they are substantially stronger than the new ones.
Ah - so good to finally find someone who knows that water bathed preserving is not going to poison you! The fear mongering is real! Even homemade sauerkraut is (apparently) fraught with danger 🙀I live in NZ and I know no one with a pressure canner. We mostly use the overflow method (eeek! I hear people in the US scream 😆) or the water bath method for EVERYTHING and have never met anyone who has become ill from homemade, properly preserved, produce. I laughted at your statement "family is alive, didn't die!" I have been waterbath canning for years too, we are alive too! Waterbath canning was around long before pressure canning ever existed. Alot of people don't realize that.

We just canned ours but we only counted for 30mins after boil. Has anyone else done them for 30 mins. We did that growing up . Good thing to watch hope mine was cooked long enough

Yep I used her potato canning video and they turned out great. One thing I learned is that less starchy potatoes are the best to can. I prefer the red ones.

Hello I am new to canning! I was wondering if you can use apple cider vinegar instead of white vinegar? I was raised adding it to cans of green beans when I cooked them.
You can use lemon juice in place of white vinegar. I've never heard of anyone who used apple cider vinegar. You can always give it a try and see how you like it. :)
Do you have to cover the jars with an inch and a half of water??? I canned green beans years ago and don't remember covering the filled jars with water. I watermarked canned my entire harvest of vegetables. I also don't recall putting a tablespoons of vinegar in each jar... 5 know it's not recommended by the experts. Just asking.
Do you have to blanch the beans? Can you use citric acid instead of vinegar? As far as I can remember, this is how my grandmother did her green beans. Not 100% sure due to the fact she kicked us kids out doors once we picked and snapped the beans. She had a very small kitchen, so there was not a lot of room when you are processing/cooking food.
When I was first taught to waterbath greenbeans I was taught to cook them for 5 minutes then put them in hot jars with hot lids, hot water and salt. No vinegar but over time I picked up this new way which is the video I put up. The vinegar is just a little reassurance for having a low acidic food in my opinion. You can substitute vinegar with lemon juice. I have greenbeans from last year without vinegar and everything was processed hot. I hope this information has helped.
Cook your mushrooms about 5 to 10 minutes strain the liquid off into a bowl, pack your jars tightly then strain the liquid through a coffee filter. Pour the liquid into your jars. If you need more liquid add some water to completely fill your jar at the level you want. Waterbath for 3 hours.

When you are canning low acidic foods the vinegar in my opinion gives acid to the food for preserving. I have canned greenbeans without the vinegar. Some people say they taste it some say no. I don't taste it. I have heard of people using lemon juice in place of the vinegar and they say it doesn't change the flavor.

It's a 21.5 quart canner that I got from Walmart. It said it will hold 7 quart jars but I only put 6 in mine. I've had it for a few years. I use to have my daughters great grandmother's canner but I can't find it. I used it when I first started canning 20 years ago.
@@michellesgarden I just bought a large stock pot from Walmart yesterday but it is not advertised as a canner. Does it have to say it is a canner in order to be used as a canner? The one I bought is a 14.5 circumference blue enamel stock pot. It has a rack in the bottom but it doesn't have a rack with the handles. EDIT: I took that pot back yesterday because I filled it with water, got my boil going and when I came back the water was a rust colored. What happened was the holes in the rack rusted and that turned the water into rust water as it boiled. Learned my lesson and bought a stainless steel canner this time
That I'm not sure about. I would think as long as the jars are on a rack and don't sit directly on the bottom of the pot you can try it. I don't personally know anyone who has used a stock pot for canning. There is a fb page called waterbath canning only no pressure canning aloud. There is alot of knowledge from that page and you may get some answers from someone who has used a stock pot before
I was watching your video on WB green beans, last yr I put up some apple butter I didn’t have a canner pot With a rack at the bottom I just use a spaghetti pot put kitchen towels on the bottom of the pot fill the pot with water and put the jars in like that, it worked great no problems@@michellesgarden

I know I’m spitting in the wind but please know that it is a form of Russian roulette. I’m 70 years old and canning was our way of life because I grew up in poverty. Even then Mom used the safety tested recipes and canned low acid stuff in the pressure canner. Do whatever you want to for yourself. But I’m just saying this for new canners. A friend of mine lost several family members to botulism and almost lost her daughter due to green beans canned this way served at a family dinner. Why would you take a chance? No need ever to sterilize jars if they process in any canner for ten minutes or more.
I've been canning this way for 20 years . My mother in law taught me. Her mother and grandmother taught her. The Amish can this way. I guess it's a matter of choice. I prefer tradition especially when no one in my family or anyone I've ever known has had any problems with waterbath canning.
I do not understand why you feel you need to sterilize your jars instead of just washing them well. If the water bath canning of a low-acid food prevents botulism and kills other bacteria, then it would also "sterilize" your jars. And if you say it is just because you always did it that way, well, that is not a good answer. You need to use logic and common sense, and know the science behind what you do. That step of sterilizing jars seems just silly to me, since you feel the food is "sterilized" enough to eat. And aren't the beans awfully soggy after cooking for so long?
I guess no one had common sense for years because we all sterilized jars. It's actually none of your business why she is still doing it. It's her kitchen, she can do whatever she wants and definitely doesn't need to answer rude posts like yours. Practice what you preach and use common sense when you post.

Yes my canner does that also. I haven't been able to figure out a way to stop that. I just clean up the mess.

12 to 18 months is usually how long I have greenbeans stored for.

I use only garden fresh vegetables or fresh vegetables from the produce section of the grocery store is fine.

I canned carrots that way. Much better than store bought. Would canning asparagus be the same as green beans. 2 hours with vinegar.

I store mine on a shelf in my basement. If your house is air conditioned then you can put them in a pantry closet.

Does the vinegar change the taste much of the beans?
Some people say they taste it some say no. I don't taste it. I have heard of people using lemon juice in place of the vinegar and they say it doesn't change the flavor.

I don't waterbath my squash. I usually only grow one plant because no one at my house eats it but me.

I waterbath because that's the way I was taught to can food and I enjoy canning this way. It really has to be up to you. I just do what brings me joy.

I would think so. I've made homemade vegetable soup and canned it. But as far as can soup from the store I don't see why not.

What size water bathing pot are you using?
It's a 21.5 quart canner that I got from Walmart. It said it will hold 7 quart jars but I only put 6 in mine. I've had it for a few years. I use to have my daughters great grandmother's canner but I can't find it. I used it when I first started canning 20 years ago.
@@michellesgarden I just bought a large stock pot from Walmart yesterday but it is not advertised as a canner. Does it have to say it is a canner in order to be used as a canner? The one I bought is a 14.5 circumference blue enamel stock pot. It has a rack in the bottom but it doesn't have a rack with the handles.
EDIT: I took that pot back yesterday because I filled it with water, got my boil going and when I came back the water was a rust colored. What happened was the holes in the rack rusted and that turned the water into rust water as it boiled. Learned my lesson and bought a stainless steel canner this time
That I'm not sure about. I would think as long as the jars are on a rack and don't sit directly on the bottom of the pot you can try it. I don't personally know anyone who has used a stock pot for canning. There is a fb page called waterbath canning only no pressure canning aloud. There is alot of knowledge from that page and you may get some answers from someone who has used a stock pot before
I was watching your video on WB green beans, last yr I put up some apple butter I didn’t have a canner pot With a rack at the bottom I just use a spaghetti pot put kitchen towels on the bottom of the pot fill the pot with water and put the jars in like that, it worked great no problems@@michellesgarden
Why vinegar?
It helps in the preservation of a low acidic food. You don't have to use it. I have canned greenbeans without it. Just process for 3 hours.

I know I’m spitting in the wind but please know that it is a form of Russian roulette. I’m 70 years old and canning was our way of life because I grew up in poverty. Even then Mom used the safety tested recipes and canned low acid stuff in the pressure canner.
Do whatever you want to for yourself. But I’m just saying this for new canners. A friend of mine lost several family members to botulism and almost lost her daughter due to green beans canned this way served at a family dinner. Why would you take a chance?
No need ever to sterilize jars if they process in any canner for ten minutes or more.

I've been canning this way for 20 years . My mother in law taught me. Her mother and grandmother taught her. The Amish can this way. I guess it's a matter of choice. I prefer tradition especially when no one in my family or anyone I've ever known has had any problems with waterbath canning.
I do not understand why you feel you need to sterilize your jars instead of just washing them well. If the water bath canning of a low-acid food prevents botulism and kills other bacteria, then it would also "sterilize" your jars. And if you say it is just because you always did it that way, well, that is not a good answer. You need to use logic and common sense, and know the science behind what you do. That step of sterilizing jars seems just silly to me, since you feel the food is "sterilized" enough to eat. And aren't the beans awfully soggy after cooking for so long?
I guess no one had common sense for years because we all sterilized jars. It's actually none of your business why she is still doing it. It's her kitchen, she can do whatever she wants and definitely doesn't need to answer rude posts like yours. Practice what you preach and use common sense when you post.
