- Turkish roasted eggplant salad is flavorful and colorful easy to make salad recipe for summer. With the recipe, I will show you how to roast eggplants on the stovetop. Try to choose fat and big, soft eggplants if you can find to have as much as flesh possible.
Ingredients to make Grilled Eggplants Salad:
3 big eggplants
3 sweet red pepper
handfull of parsley, purple basil or green basil (You can use scallions, fresh mint, green basil if you want too)
About 2 tbsp olive oil
pomegranate molasses, lemon juice
salt, red pepper flakes

My friends I forgot to mention that you can add finely chopped onions or scallions to this delicious salad. For health purposes I don’t use fresh onions on my salads. But it really gives a kick to it 😊 and yes it is great with pide, flat bread and ayran as yurtsever mentioned 👍

I love eggplant but I cannot cook them whole because they taste too bitter. I have to slice them and soak in salt water first. I wish I could roast them especially for babaganous. Do you ever have a problem with bitterness?

It is not bitter. Maybe you can look for other types or ones that are little soft to touch when you buy. Not sure. May I ask where you live to know where the bitter eggplants are

Honestly growing up I knew 2 ways to cook it: 1 fry it and then serve it with yogurt mixed with garlic and dried mint, 2. Roast it in the oven along side other root vegetables and onions.
Never knew I could add it to soup or make it into a salad until watching Ayesanur.
I remember loving it as an appetizer like Baba ghanoush but never daring to make it because it was outside my comfort zone. I appreciate every tip this channel has taught -I’ve gained some confidence in the kitchen.

Hi. I am from Florida USA and enjoy viewing your videos. Here Turkish food is not popular but I think some dishes are similar to Greek (popular here). Anyway I am going to try this salad by roast the veggies on the grill. We have a good crop of avocados from our tree so we will use that as well.

So delicious! I love this salad! I bought a kozmatik online a few months ago to grill vegetables and it really works well on my gas range. Such good flavor to the eggplant and peppers. I added garlic and onion to mine plus some diced roasted Roma tomato. It turned out great!

The pomegranate juice will make a great difference to this salad- in far off Kolkata in India we call this Begun(egg plant) pora( grilled, so grilled egg plant) where we mix all the ingredients you mentioned except the pomegranate juice. Love your recipes!

Very nice salad, I tried it yesterday. Thank you for the tip with the grilling pan, I used my cast iron pan and it turned out so much better and quicker than when I broil eggplant on the oven. I used parsley and mint and it was delicious. Normally I don't like parsley, even though in my native cuisine it's also popular in Hungary, but in this salad it is really like a building block and I can't really feel it individually, it blends into the flavour like a colour of paint blends into the painting. It was so exciting to mix the salad because until I started adding olive oil, lemon juice and pomegranate molasses it felt a bit blant but wow what a difference it was once everything was mixed.

Well we use mustard oil instead of olive oil and put tomatoes (chopped), cumin, red chilli and coriander powder. And we also put some onions. But i also like your version very much. I will try it. Here in Pakistan we don't have pomegranate molasses. If you can suggest any replacement of it.❤

I agree with Casey. Eggplant 🍆 is such a wonderful vegetable, but in the US we don’t know what to do with it except for eggplant parmigiana. I’m so glad you’re teaching us new delicious and healthy ways to prepare it. Cauliflower is another one that we don’t know what to do with it???

@@TFT 😊 hello 🙋, when we make vegetable and when it's almost cook we had dry coconut or some time wet coconut. Just cut the wet or dry coconut and put it in the mixer grinder.

Hi Miss Aysenur I have never seen a pan like that it looks like a pie pan but with slots in them pretty unique. I use a cast iron griddle on my cooktop . Looks delicious like always 👏👏👏

excellent, added chopped toasted onions/garlic puree as well. excess moisture from aubergines and peppers is a problem, even after tipping tray to drain out some water; the water comesf romm the heat of the roasting and also, I chopped aubergine too fine so it became a bit mushy. will use sieve or cloth (to squeeze out water) next time. the balance between eggplant and other veg is important too as too much eggplant can be overwhelming in flavour. many thanks
