I think your gelatin was dissolved properly, it was not hard to see it dissolve in the boiling liquid. Oil is less dense than the water. Coconut milk contains a great amount of coconut oil. The reason for a gelatin layer at the bottom is the coconut oil floats on the upper layer while the water and also gelatin liquid sink to the bottom. To facilitate the solidification of this pudding, when it’s not that hot, put it into the refrigerator for cooling and solidifying. If it’s solidified quickly, the oil will not separate from water. However, if it’s solidified slowly, it has a greater opportunity for the coconut oil to separate from coconut milk and float to the top. Pls check if your refrigerator is cold enough. One more tip: you can stir the liquid for a few times before the pudding becomes solid.
my experience is to use little water add gelatin n stir it, then place the bowl into hot water to dissolve it first b4 adding it into the pot, no need to boil the contents with gelatin

溫馨提示:
椰漿裏面包含大量椰油,在完全凝固之前如果停放太久,較輕的椰油部份會停留在較上層,而較重的魚膠和水份會下沉,就可能會出現兩層色。
改善方法:要確保魚膠粉煮溶,將溶液攪拌均勻和稍為放涼,攪拌均勻就馬上放入雪櫃,讓它盡快凝固,唔好俾機會佢係室溫分體。更加要留意一下你的雪櫃會否不夠凍,不夠凍會減慢左凝固速度😊所以會出現問題!
可能要首先放在冰盤搅到半凝固才放入雪櫃

魚膠糕點毋須落油脫模,只要響食嘅時候用牙簽響糕邊行一圈,之後將整個模浸落暖水大約5秒左右,見糕邊有輕微溶解,反轉就可以完美脫模了。
