Vlog #33 making winter sausage and decorate with me for Christmas

  • Another week closer to Christmas. Whenever its our turn to bake, the days that we make the bread we are free from all community work, except when we have to make sausage that is one day of work that we are not free from. you have to do both jobs or you don't make bread that day. we had enough bread so I didn't have to do it this time around. of course we also did some Christmas baking and that is defiantly one of my favourite Christmas traditions.

    Pfeffernusse (peppernut) cookies
    1 cup butter
    1 1/2 cups brown sugar
    2 large eggs
    2 1/2 tsp anise extract
    1/4 tsp table salt
    2 tsp baking soda
    1 1/2 tsp cinnamon
    1 tsp ground ginger
    1/2 tsp white pepper
    1/2 tsp ground cardamom or clove
    3 1/2 cups all purpose flour
    cream together the butter and brown sugar until light and fluffy. About 3 minutes. Add the eggs, anise extract, salt, baking soda, cinnamon, ginger, white pepper, and clove or cardamom into the bowl and mix until everything is incorporated. Add the flour into the dough and mix just until it is incorporated. form into ropes however thick you want them and refrigerate for at least 4 hours or overnight. bake at 350 for 10-15 minutes.
    chocolate granola balls
    2 cups quick oats
    1/8 teaspoon salt
    1/2 cup unsweetened shredded coconut
    1 cup sliced almonds
    1/2 cup honey
    1/4 cup extra-virgin coconut oil
    1/2 cup creamy peanut butter
    1 teaspoon vanilla extract
    1/4 cup natural unsweetened or Dutch-process cocoa powder
    1/2 cup semisweet or bittersweet chocolate chips
    In a medium saucepan, combine the honey, coconut oil, peanut butter, vanilla, cocoa powder and chocolate chips. Heat the mixture over medium heat, stirring constantly, until melted and smooth.
    pour over the rest of your ingredients, mix well. using a cookie scoop form into balls. place them in the fridge to harden a bit if you feel the need to do so.

    The plate you showed at 16:51 is the exact same plate designs that I have in my cabinets (in Texas, USA). I chose them because they are the same dishes my grandmother has in her cabinets (in Oklahoma, USA)

    The recipe my mom had for pepper nuts she put the dough in the fridge for a week!! Pepper nuts are the best cookie to dunk in coffee!!

    Mmmm!!! Chai tea!! I may not care for those cookies but we can definitely agree on tea!!
    I love to make chai tea lattes at home. They are so good. And at Christmas time I stir them with peppermint candy canes to give them a peppermint flavor.

    My gramma always made peppernuts at Christmas, but she never glazed them and left out the anise. They will forever remind me of her.

    You have said how the store provides all your needs. (The Colonies) is that where you get your candles too? I think that would be neat if the store stocked things like that.

    I just discovered your videos today and I’m glad I did. This is the first one I watched and I sure enjoyed it. I would love to work in that kitchen! And I find it so interesting how you make your pepper nuts. I have a recipe for pepper nuts as well or (pfeffernusse) and they are very different. I am Mennonite and I think I understood what you were saying when you were bringing someone coffee near the beginning of the video, some thing about putting too much cream in the coffee? When you were speaking your language

      I'll have to ask our cook thats her job when making it but, we add salt, pepper and potato starch she will know the ingredients.

    I bake whole wheat yeast bread for my family. I score my bread on top. Why do you poke holes in it? Maybe same reason? I've never thought of doing that.

    Is your dog the only one in the Colony? Does someone stay out side watching the sausages? I’d be concerned about dogs or a wild animal smelling all that goodness. Oh and I wouldn’t eat the heart or liver either. Lol

    I greatly enjoy your vlogs, Giselle! God bless you :) I have one rather random question for you: how many yards of cloth do you use in your jumper skirt? I'm a seamstress just starting to sew my own jumpers and I have been needing to find a good yardage in the skirts to make them wide enough to work in, hence the question :)

      My personal lenght is 38 inches or approximately 2 yards. But, I guess that changes a bit from person to person depending on the size.

    How in the world does everyone get scheduled for the various assignments?

      you get assigned jobs as you come of age usually starts around the age of 13 after school doing odd jobs and basically like off the colony you have to work your way up, unless we need someone for a specific job we get together and vote to see who would be the best fit for certain jobs so having someone assigned to something like a German school teacher for example can involve the whole colony.

      The ones we had are actually called Scottish sausages or Lorne sausage but I just called them by the name on the box....the others are a little tounge twisting.

      It doesn't stay out for long only until its cool and we have never had a problem with wild animals coming unto the colony.

      Yes...we do it so they don't get a crust while they rise (we don't have a riser)

      I'm not putting my colony name on here.....its never a good idea to put your exact location on any social media platform. And I also don't want anybody telling me where they are from. Its never a good idea.

      Life is full of mistakes, accidents happen although we have never had someone really break an appliance to the point where one of our men couldn't fix it 🤔😊

    Sweetness I have a question do the singles stay living with their parents until they are married and how do they meet potential partners or is that rare because of space or lack of housing

      Oh yes if one doesn't get married they stay living with their parents, as for meeting partners ways it has happened is if we pick a colony to visit for a Sunday afternoon or visit aunts and family members and meeting someone but, there are also some where both people come from the same colony, it is common, if they get married and there is no house available they live with the men's parents until there is a house available 😊

    We put grinded anise in the "pepernoten", because it gives more flavour than oil.

    Anise/licorice cookies?!?!!!!???? Do that many people in your colony enjoy that flavor? I know NO ONE in my entire life (about 300 people) who enjoys that flavor.

    Your meat is beautiful! It looks so nice and fresh, probably because you are just now grinding it.I was thinking today about you “out in the world”:as you said you were a few years ago. You didn’t mention what kind of work you did then, it watching you these past few days I have counted several jobs you could easily do in our world. Baker, pastry baker, commercial cook, any cafeteria, school or nursing home or hospital, any commercial green house or farming operation, any cleaning or janitorial service, lifeguard, kindergarten teacher, helper, or day care worker, any commercial meat processing plant, USDA Federal Agriculture Meat Inspection service, truck driver, bus driver, mother’s helper, writer or vloger, test kit her worker, wife, mother, crocheted goods created, sewing plant worker, department store manager or worker. Pet store worker, veterinary assistant, dog walker. Have I missed any? Book store worker, maybe? I am enjoying your volgs very much, I am even learning a lot. Can’t wait to watch the rest of them!

      I'm happy you enjoy them 😊 yes that is quite the list of Jobs that I could have done but, most people don't know about the hutterites and with me appearing kinda out of the blue they were hesitant to hire.

    Also wow, must take forever to make sausages that way 😶 I see you have some of it machinerized but we have everything machinerized. We basically need 3 diene to make wurst. How many hours did it take throughout the day?

      Its took us roughly 8 hours which is long. Yes we are hoping to have more machines in the near future. 😊

    Ugh. The sausage casing part was nauseating. I hate touching raw meat and the smell of raw meat. 🤢 I’ve pushed thru and cook meat but I doubt I’d be able to do that! You must have a strong stomach!!!

      In my cookweek it does not seem to smell that bad...but, there are times for example when we make sausage that the smell is too strong and doesn't smell good.

    Do you all wear masks when you prepare food and work in the meat room? You wear a mask when on your own cleaning the church...oh I see some of you have masks covering over your nose... but not all in the sausage making group
