I like to watch videos of sushi chefs work. I used to make sushi as a full time job. Very much a life long student in the techniques. Something about this guy doesn't make me feel like it's worth the price tag. I think you definitely paid for the ambience on this one. My example is sometimes he goes yuzu then brush soy sauce. I don't like that bc now the brush has citrus juice on it and you put it back in soy sauce jar. Ruining soy sauce.
