👌👌👌 The bhindi fry & capsicum fry raitas were something new. In the cucumber raita, we add coarse chana powder (murmurs chana wala chana, pounded coarsely). It not only absorbs the water released by cucumber, it adds to the taste too. Chopped green chillies, coriander, pepper & roasted jeera powders & a pinch of black salt. Whereas in lauki raita, especially during upvas, we do a tadka of ghee, jeera, green chillies. Add lauki pieces, salt, cover & cook. When it comes to room temperature, add curd, roasted jeera powder, pepper powder &/ or red chilly powder or finely chopped dark green chillies & coriander. Boiled potato sabzi can also be made this way for upvas, with or without dahi (can be an accompaniment). Maharashtrian raita has cucumber too. How about pineapple raita/apple raita?
Chat masala and boondi. I have never heard of it before and unfortunetly I don't think anyone sell it in my area in Norway. But the raita looks so delicious, I am addicted to raita in general! Thank you SO much for sharing 🤗

Thank you for sharing 😊 In "lauki's raita" we can also add a few pinches of mustard seed powder but make sure you add really little amount. It enhances the taste of raita n u would love it.
