heating the noodles back up with broth and then pouring it out and then refill bowl with hot stock again... very nice touch. i know a lot of cooking trix(hence the name) and this is new to me. i used to dip them in boiling water before use. i like this a lot and it is my new way. the sieve in the pot to filter is a good one too. thank you

I don't think everyone realises just how spicy that red pepper paste is. It's not like regular American hot sauces, it's totally different. And she put A LOT in her dipping bowl. She's a strong woman who's used to the spice! c:

I tried the hot pepper powder and the paste in my cooking.. it is actually mild and even has a mild sweetness to it.. chilli powder from India used in Indian cooking is actually a lot hotter(spicier).. but i guess the heat tolerance must be different for different palates and cultures...

LOL yup ... Indian food in American restaurants isn't spicy because without a warning most americans wouldn't be able to handle the heat :D yes the hot sauces are basically mostly sour and a little spicy. Most savoury things in Indian food have spice added to them, and unlike just the heat and the mouth puckering sourness that we usually experience from hot sauces, Indian food has a lot of flavor along with the heat.. and I think my tolerance for heat is very high because our everyday meals are generally spicy :) If u can handle the heat, you should try authentic Indian food :) and to counteract the heat, our desserts are small and quite sweet :D
Brilliant way of cooking the egg. Never seen before. Usually you drop the egg in the water and cook it but this is amazing. Saves a lot of resources of using separate pot to make the poached egg. You are an amazing chef.
I really like it when you talk about your mom. I can tell you one thing about my mom: she always makes me wash vegetables in the packaging, then use the water to water the plants and then you can throw away the packaging and cook the vegetables. So, whenever she starts cooking, she always calls me to open the front door so she can run outside with the dripping vegetables to water the plants. :D
You rock girl! This Iowa farm boy started out making your kimchi a few years ago and through your videos I have developed a great love for Korean cooking. In 1981 I visited Pusan Korea (twice actually) and being the foodie I've always been I went exploring various restaurants there. Ate stuff I had no idea what they were or even how to make them. some things (Bulgogi for instance) I could make educated guesses and approximate at home. Watching your videos has been like going down memory lane for me. I now know what some of the things I could not identify then are now and better yet I now understand how to make them. My mother is from South America. Her noodle soup is basically boullion seasoning, chicken, carrots, and potatoes in a vegetable or chicken stock. The flavors in this are sooo different. I'm excited to try and make it! Thanks Maangchi. =D
It's so strange when people ask you, why do you rinse your noodles with cold water... even when I make pasta I rinse it with water so it won't get starchy or too soggy. I thought it was something elementary worldwide.

In 1981 I visited Pusan Korea (twice actually) and being the foodie I've always been I went exploring various restaurants there. Ate stuff I had no idea what they were or even how to make them. some things (Bulgogi for instance) I could make educated guesses and approximate at home. Watching your videos has been like going down memory lane for me. I now know what some of the things I could not identify then are now and better yet I now understand how to make them. Thank you for that.

사실 잔치국수 같은 건 한국에선 가격도 싸고 하니 집에선 잘 안 해먹었거든요. 집에서 만들면 감칠맛이 잘 안 나던 이유도 한몫 하구요. 근데 이걸 보니까 만들어 먹고싶은 마음이 막 샘솟네요. 특히 저 '김치 페이스트'가 맛을 굉장히 돋궈줄 것 같아요. 좋은 영상 고맙습니다^^

My mother is from South America. Her noodle soup is basically boullion seasoning, chicken, carrots, and potatoes in a vegetable or chicken stock. The flavors in this are sooo different. I'm excited to try and make it! Thanks Maangchi. =D

It's so strange when people ask you, why do you rinse your noodles with cold water... even when I make pasta I rinse it with water so it won't get starchy or too soggy. I thought it was something elementary worldwide.
