  • Today I made Janchi guksu. Janchi guksu is noodles in broth with toppings.
    Janchi guksu is literally translated into “Party noodles” because it’s a dish served at parties.
    It is especially served at weddings, wishing a long and happy life for the couple.
    So, in Korea, people say “When are you serving us noodles?” to ask “When are you getting married?”

    * Ingredients (For 2 person)
    noodles(somyeon) for 2 person
    Broth: 1L water, dried anchovies, dried kelp, soy sauce and salt to taste
    Topping: 1/3 zucchini or aehobak, 1/3 carrot, 2 eggs, salt to taste
    Sauce(*optioanl): 2Tbs soy sauce, 1/2Tbs chopped garlic, 1/2Tbs sesame oil, 1tsp sesame seeds
    1Tbs red pepper powder, 3~4Tbs chopped green onion or chives
    * Recipe
    Broth
    1. Bring broth ingredients to a boil in a pot.
    2. Once boiling, lower the heat to low, take out kelp.
    3. Add a bit of soy sauce for color and season to taste with salt.
    You can use this broth both hot or icy-cold in summer.
    Topping
    1. Julienne zucchini(aehobak) and carrot. And then stir-fry with salt.
    2. Beat the eggs with salt, pour it on a pan and fry it in a thin sheet (jidan).
    3. Cool the jidan completely and julienne.
    Noodles
    1. Add and cook noodles in boiling water.
    For bouncy noodles, add cold water about 2~3 times whenever the pot overflows.
    2. Rinse the noodles in cold water and drain.
    3. In a bowl, serve noodles, broth and topping. done!
