"Get Hooked on These Heavenly Homemade Lamb Buns (Keke Mamoe)!"

    Homemade Lamb Buns Recipe (Keke Mamoe)
    Lamb Meat Ingredients
    1 to 1 and half kilo lamb meat
    1 small chilli finely chopped
    1/2 cup of good dark soy sauce
    1tsp of black pepper
    2-3 teaspoon of salt
    1 teaspoon of fine dry rosemary
    8 or more cloves of garlic crushed
    1 large onion finely chopped
    Method
    Mix all ingredients well and marinate the lamb meat for few hours or more even better overnight but few hours will work well.
    Dough Ingredients
    4-5 cups all purpose flour
    2/3 cup warm water
    1 cup of warm milk
    2 Tablespoons of active dry yeast
    4 Tablespoons of melted butter
    1/4 - 1/2 cup of sugar
    1 teaspoon of baking powder
    1/4-1/2 teaspoon of salt
    Method
    1. Combine warm water, milk, active yeast, sugar and butter. Whisk to let sugar and yeast dissolve then let it sit for 5 to 10 minutes until the yeast is activate.
    2. Combine flour, remaining sugar, baking powder and salt in a bowl or a stand mixer.
    3. Pour wet ingredient and mix through. Transfer on to a bench and knead the dough for about 10 minutes
    4. Leave it in an oiled bowl and cover to rise for about an hour and half or until double in size.
    5. Once it's ready divide the dough into small balls ready to assemble the buns.
    6. Assemble your buns and steam it for 20 minutes
    Note:
    I steam the buns a bit longer than 15 minutes because the lamb meat is half cooked so it needs to steam a bit longer for it to cook well. 20 minutes is perfect

      Top of the morning sista from Melbourne. Yes I did use a leg of lamb mixed with lamb flaps or the rib part of it without the bones. The leg has most lean meat but the rib part has mix of fat in it that gives flavour. The rib part is the poly's favourite 😂😂 I'm excited for you sista. You're making me hungry now for some. In regards to your question about the meat. Yes pls go ahead and cook the meat especially pork in my opinion. You cook according to your preferences and taste. I do both precook and half cook. If I half cook pork or lamb I make sure I wash it thoroughly with hot water and even vinegar then drain all the excess water well before I marinate with soy sauce chilli and the rest of the ingredients for couple of hours or overnight. Steaming the bun for 20 minutes if I half cook the meat will allow me to cook it well while steaming however if you precook your meat then steaming your bun for 10 -15 minutes will be okay.       Hi sis Paulini, at the time I made these buns the normal lamb flans was more expensive than the leg of lamb I found in my local supermarket that week so I used leg of lamb instead of lamb flap but I guess you can mix not cut of lamb. I cut them very small because perhaps a little bigger than a bake bean if you know what I mean. Let me know how go sister. Thank you so much sis. You know what I use my stainless steel one for when I make a heaps of buns but if it's just for me and family I use bamboo. Bamboo you don't have to worry about putting cloth to prevent the steam from soaking the buns. The bamboo sucks up the water well better than the steel pots that's my observation sis. 🙏🏻❤️

    Do you cook the meat before you wrap in the dough? Or put it in raw?

      In this video I didn’t cook the meat thoroughly. I added boiling water to wash off blood impurities from the meat and at the same time it was cooking the meat a little. I then thoroughly drain off excess water from the meat before I added all the marinade ingredients and marinade it overnight or few hours. I find it doing this way it keeps the meat juicy and tender even when steaming in the bun for 20 minutes. I’m saying that some people prefer cooking their meat and cool it down before assembling the buns.

      Hello there, In this video I didn’t cook the lamb. You’re most welcome to cook your lamb and cool it down before filling your buns however as I said I didn’t cook it in this video. I washed it with hot water from the kettle then I drain the water completely before I added my flavouring ingredients. I also marinated for few hours then assembled the buns. The meat will cook well for 20 minutes in the steaming process. I’ve tried both ways of cooking the meat prior to assembling the buns and this way. I find it this way the meat is juicier. We’ll that’s just my opinion.

      Hi Peka, May I pls ask if your dough rose or proof well or double in size? I’m thinking maybe your yeast died or didn’t proof. The reason being is that either your yeast is old or your milk or warm water is way too hot. I’ll encourage you to try the dough I used in my Char Siu pork flavor buns I made couple of weeks back and see how you go.

      @@natomose391 Hi Nato maybe you left your dough too long to proof or the air hasn't been eliminated enough too. they say 45 minutes to an hour is the max time to proof the dough. I notice that when I make my dough then I have to go somewhere and the dough will sit for more than an hour it will flatten after few minutes. I hope that helps Nato. let me know how you go pls.       Hi Presley Misa thank you for stopping by. Sorry for the late reply. Washing your meat with boiling water will slowly cook your meat but not completely cooked. Some people cook their meat first before Assembling the bun it's totally up to you. I find it doing it this way the meat is a lot juicier when the bun is cooked.       Hi there so sorry for the late reply. I didn’t cook mine however you’re most welcome to cook your meat prior to assembling your buns. I’ll explain the reasons why I don’t cook mine particularly with the lamb meat I used in this video is the lamb leg meat not the lamb flap. The meat on the leg is more tender and cooked quicker than the lamb flap. I also washed my meat with hot water after which also cooked it for a little and got rid of some blood. I then marinated in salt, soy sauce, a little hot chilli peppers and the rest of the ingredients for few hours or overnight. Salt and chilli were also tenderise agents that helped while in the process of marinating not only it gave some flavour it also tenderise the meat plus the 20 minutes. In my opinion my buns turns out juicer and flavourful going this way if I cook the meat especially the lamb leg meat before assembling the buns it’s a little dry. Everyone has different tastes and preferences so do your way if you’re not comfortable with uncooked meat. Cook it first if you like then assemble but mine turned out perfectly cooked because it was well marinated longer. I hope this helps. Sorry for my long message. 🙏😊

      I only realised after I posted, that I personally prefer my beef and lamb cooked medium well. So 20 minutes in the steamer with cubed/bite size meat is more than enough time to cook it through.
      And you’re right…. I’ve had some keke pua’as and mamoe where the inside was dry. Most likely from the double cook method.

I use to cook my meat too before but after trialling this way I never went back especially for the tender kind of meat that can be tenderise with agents like salt, chillies etc. I also think chillies takes it to the next level however not too much a small amount goes along unless you’re not a fan.
