TAGLIATELLE WITH WHITE TRUFFLES

    Today I will be sharing with you recipe of homemade Tagliatelle. And sauce I will be doing from white truffles.
    So here are the ingredients for the pasta dough:
    (For 4 servings)
    200 gr flour
    2 fresh eggs
    10 ml Extra Virgin Olive Oil
    1 pinch of salt
    Mix all the ingredients until obtaining uniform consistency then wrap it in a cling film and let it rest in the chiller. After 30 minutes start to fold it in the machine gradually every time reducing the gear and, if you feel, add more flour during the process to avoid stickiness. Cut the pasta sheet to approximately 20 cm. Slice the pasta sheet in the machine's cutter of or delicately roll the sheet and cut in slices with a sharp knife.
    For the truffle sauce:
    12 gr white truffle ( if not available you may use black truffles, depending from the growing season)
    40 gr butter
    60 gr Grana Padano cheese
    2 springs of thyme
    2 gr salt
    1 gr Pepper
    Melt the butter in a pan then add the thyme and salt, then add a little bit of the boiling water to create the creamy sauce.
    Cook the fresh pasta in a salted boiling water for 1 or 2 minutes then toss on the sauce. Add the cheese, pepper and grate some White Truffle. Mix together until the sauce becomes creamy.
    Plate the pasta in a dish and shave on top some more Fresh White Truffle.
