Hello Elizabeth, they freeze well. To freeze, wrap the Pumpkin Roll tightly first in a layer of plastic wrap and then in a layer of foil. Store it in the freezer for up to 1 month.❤️🤗

Hello Alex, it’s kinda tricky. You really have to be gentle and do it slowly as possible. Use the parchment paper beneath it to help with the rolling. Pushing the cake as a roll by just using the parchment paper under the cake.
Sometimes if I’m lucky I can get it by testing it once before the actual filming but sometimes I have to repeat and retest it like 3-4 times to perfect the recipe before the actual filming day.😅

Hello my dear Stella! The xanthan gum makes the cake more pliable for rolling. You can skip it, just be more careful when you roll the cake to prevent from cracking.❤️
I'm going to try making this with pumpkin seed oil, cream cheese drizzle frosting & toasted chopped pumpkin seeds. (~_^) ==> #YUM
