I made it again and it did work ! Perfectly ! However I doubled the cream and put a bit less monkfruit sweetener . Will post pictures on Instagram!! We ate the previous one as “ mom’s lazy roll” I just cut it in small squares and mixed with cream . This one ended up amazingly good. Chilling in the fridge . Thank You. God bless your talent !!

Brilliant I just made but added 1 extra white and yolk and make in standard size baking sheet for 15min next time I will spray with oil - the crumb is amazing! It’s in my fridge setting up now! I added some frozen berries before I rolled it

Thank you Rocio! ❤️ You have to cool the cake for 10 minutes. The reason is to not melt the whipped cream when added (when the cake is too hot the whipped cream will melt) and if you leave the cake outside cooling it completely will make your cake crumble while rolling it.

Usually I advise people to cool them in a cooing rack to prevent condensation but you already did it. I can suggest to grease the parchment paper before pouring your batter if that’s the case. Hope it helps.❤️

Hi! I haven’t tried using coconut flour in this recipe. Coconut flour is much more absorbent than other flours, so it’s not possible to substitute without drastically changing the recipe.
