PASTRY CREAM:
2 large egg yolks at room temperature
¼ cup (50g) powdered sweetener (I used Lakanto)
⅔ cup (160mL) heavy whipping cream
3 tablespoons (45g) salted butter
1 teaspoon (5mL) vanilla extract
⅛ teaspoon (0.4g) xanthan gum
ECLAIR BATTER:
1 cup (100g) blanched almond flour
¼ cup (28g) coconut flour
1 teaspoon (2.5g) xanthan gum
1 teaspoon (4g) baking powder
1 cup (240mL) water
⅓ cup (80g) salted butter
1 teaspoon (5mL) vanilla extract
2 large eggs
CHOCOLATE GANACHE:
1 ½ ounces (43g) sugar-free chocolate
¼ cup (60mL) heavy whipping cream
Bake at 375°F (191°C) for 30-35 minutes or until slightly brown.
Yields 20 éclairs (macros per eclair)

PROTEIN: 2.8g

I made pate choux dough and made something testing out it came out okay. I'm new to nut flours as I've only made recipes I've seen and made not go off experimenting. So her so far I've tried two of her recipes and let me tell you tried and true recipes they were very good!

I wonder, what it is inspiring you to be so creative. I’m almost 64 years old, mother of one beautiful daughter and grandma of a 19 months old handsome baby; retired of being a physician because of medical issues that have improved a lot with the ketogenic diet. Cooking is been one of my hobbies, I looove to feed people 🤣. I studied in my spear time the art of baking and other desserts, but breads are my love affair it doesn’t matter if I can eat them or not. For me the kitchen is my art room and I have this strong desire of opening a little cafe to make people happy.
You should do it...I bet you would make a lot of people happy making low carb or sugar-free desserts

I can't wait to try these! If I can give you a suggestion for "batter" in italian, it changes depending on what you are making. Usually you can translate batter with "pastella", especially for desserts and sweets! Sometimes, when it's thicker (more like a dough) it is called "pasta", for example "pasta per la pizza" (pizza dough) or "impasto". I know, we are complicated 😆 I hope this helps! Because "battitore" means "someone who beats something/someone" 🙈
