I'm Ukrainian and my mother's Napoleon is one of the things I really miss. I recently managed to veganize her pastry cream very well, but, to my surprise, the pastry, which is the rich, flaky kind made with butter but also egg yolks and heavy cream, was much harder to replicate. dear @@muriellebanackissa, i baked the cake two days ago and it turned out really delicious. my family and even my russian neigbors tasted it and were excited :) i just switched the maple sirup for beet sirup and the corn starch with chickpea flour because i had them at home and forgot to buy the other stuff. i also like the recipe, because it looks of more effort, than it actually is. and it tastes yummy, of course :) thanks again and best wishes from Berlin.
