My Favourite Recipe of All Time *Katsu Chicken with a Peanut Satay Sauce*

- Hi! Todays recipe is a Katsu chicken with a peanut Satay sauce- one of my favourites (this recipe has 17.6M views on TikTok!!) and I definitely think it lives up to the hype so I hope you try it!
Recipe :
2 Chicken Breasts
1/2 tsp garlic powder
1 tsp soy sauce
1 tsp rice vinegar
1 tsp honey
Salt & pepper
1 egg
1/2 cup flour
1.5 cups panko bread crumbs
1/4 tsp salt
2 tbsp avocado oil
1 cup coconut milk
2 hefty tbsp peanut butter
2 tbsp soy sauce
2 tbsp brown sugar
1 tbsp rice vinegar
1 tsp garlic
1/2 tsp ginger
AIRFRYER: 390 for 8 mins, flip 400 for 2 mins
OVEN: Bake at 425 f for 25-30 mins flipping halfway through

This video inspired me to try doing something similar with pickle juice brined chicken tenders and no one could believe these were airfried. The oil in the panko is a game changer, thanks!
I often make crumbed chicken but I never thought to marinate it first. Great idea and I’ll be doing it next time.
Scientifically it's a waste of time, as it does not tenderize nor penetrate (or flavor) the chicken. It is particularly pointless with breast meat since that's just one big muscle.

I have a couple of questions for anybody who could answer. 1. What does the apple cider vinegar do? 2. Why use chicken broth and not beef broth or beef bouillon? Thanks
1. I didn’t see her mention ACV, I’m sorry. 2. I think just because it’s a chicken dish. It makes sense to use chicken stock

For anyone marinating chicken breast, there is lots of information out there about the futility of doing so -- it doesn't tenderize it or penetrate (i.e. flavor) it.

If she called it "Chicken Katsu Curry" you would be correct, but she clearly has labelled the dish "Chicken Katsu with Peanut Sauce" which is exactly what it is.
