I was so glad to find this video again, because I wanted to thank you!!! I have a very sick liver (no, I don't drink alcohol or use needles - it's an inherited disease), so I'm very conscious as to what I can and can't eat. Traditional pizza is out, as are white breads, all red & processed meats, cheeses, and commercial sauces, including tomato pastes (too much sugar, etc) But i can have very small quantities of lean chicken breast, and fish, or shell-fish - and this just looked so good that I tried your recipe using wholemeal flour which worked extremely well even after adding 9 different seeds and wholegrains. The first few times I filled them using freshly minced lean chicken breasts seasoned with bell peppers, shallots, parsley, tons of freshly minced garlic, pepper and chillies (all of which we grow in our garden), and then I topped the chicken mixture with a home-made salsa of home-grown tomatoes, more garlic, chillies & parsley, and finally topped the salsa with some cubed feta cheese and fresh chives - and popped them in the air-fryer .... and they are insanely delish!! I didn't use the egg-wash or added butter, but I don't miss things like that. I served these with a leafy green salad topped with raw grated vegetables (carrot, beets, celery, shallots, chinese cabbage, red cabbage), and topped it with cherry tomatoes and a dressing of either homus or one made with 2 avocadoes, minced garlic, juice and zest of 1 lemon, and lemon pepper. Served together these are just so good, so filling, and so healthy for everyone, regardless of how healthy their liver is - And every time I make them over the last few months, every one of them just disappears! I also make some topped with cheddar cheese for hubby, but I never eat those - I want to live !! SO THANK YOU VERY MUCH!! I've also made them using minced fresh firm white fish fillets - boned, of course, seasoned with shallots, garlic, and lemon pepper : ) The fish goes so well with the fresh tomato salsa, which stops the fish from drying out as it cooks in the air-fryer - and also works extremely well with my wholegrain alteration to your own recipe. They cook beautifully in the air-fryer, which negates the need for any oil .. I don't even need to brush the racks with oil. I hope that others who are health-conscious are able to try my altered version of this brilliant recipe! You can do large ones as shown and slice them, or sometimes I make little bite-sized ones when I need to take a plate to a function ... but don't expect there to be any left, regardless of where you are serving them - or to whom!
When I was 13 I had developed NAFLD plus my liver function(and kidneys too) was only at 30-40% within a year. My skin and energy were awful. But it rapidly progressed as in just a year had me that bad(3 years later I found out I had Lupus). Thing is I was at my wits end and decided to go for it. I started eating only meat in 2016. Just meat, pork, beef, and lamb. Steak, ribs, roasts, and mince. In 2 years my liver function(and kidney function) was back to 100% and my NAFLD and liver damage was gone. I still eat that way because it is the only thing that keeps my Lupus at bay. Without it my body rapidly deteriorates as my immune system attacks everything in my body.

This looks amazing, just a professional tip, don’t mix salt with your yeast, salt actually doesn’t help yeast grow. Next time just add sugar to the water with the yeast and keep the salt with the rest of the dry ingredients.
Good to know, I'm so definitely making this for me and my daughter (she has 4 of her teeths now so she can smash and dummy these, at least she can chew the cheeses and sauce on her little taste buds). Thanks for your professional tip: but I don't think she wanted the dough to RISE though, lol, hence why she pinrolled her pieces into flats. I believe she was aiming for a flat crust turk pizza
While I'm sure you're a pro, that's actually not true. The amount of salt that it would take to hinder the yeast at all is significantly greater than this.

I had the opportunity to see some European countries and visit a lot of good restaurants, but food in Turkey was the best. The second best food in Bavaria. But I have never been in Asia - I consider Turkey as Europe

@xoshi.y I did art at Marmara Üniversitesi. So it wasn't very hard (it lasted 3 months, it wasn't a long one). Most of the students and teachers have an acceptable level of English (because my Turkish was and is practically nonexistent), but it was more about getting things done than attending theoretical lessons. I wouldn't say they are racists. People everywhere were extremely welcoming, as students and as tourists. It's an amazing country. Although the last years with Erdogan, my friends there are not as happy as they used to be, I don't think that affects foreigners.
I used to work at a pizzeria run by a turkish couple and the husband would makeshift these for me with the pizza ingredients! It was sosososo good and he only called it a "bateau" (boat). Thank you so much for sharing this i will 100% make it, gonna bring back memories.

The words pizza and pide come from the same Farsi word "pita", meaning flatbread. Probably both pide and pizza where both invented in the same period. They are really similar. However italians did a way better marketing of their version. Also mass migration of italians to the states helped making pizza popular in the world. Similar to pizza you can have pide with different toppings. Unlike pizza you can have pide in different shapes, boat shaped, oval, round, calzone-ish etc. I enjoy having both pide and pizza. They are both delicious.

You can also crack an egg inside too on top of the meat and it doesnt have to be seeded. (I honestly prefer mine that way). Also butter the sides after baked

You can also add an egg on top of the ground beef one, I recommend it. Mix the egg before you dump it on though, then bake it normally. You can also add cheese. My favourite pide is definitely mushrooms and cheese pide. I also recommend trying that if you like mushrooms.

Mine went up to 495 degrees f and | let it heat up for 2 hours before baking my pide. *use a thin cutting board wrapped in aluminum foil dusted with corn meal to help transfer your pide from the countertop to the oven. Another option would be to build your pide over a sheet of parchment paper and transfer the pide to the oven with the parchment paper (though this may result in less browning on the bottom crust)
Made a different version of these 4 nights ago! Google is definitely telling RUclips what I've been up to, showin me this so soon 🙄.... but for real, these things are better than pizza! We made vegetarian ones with eggplant, tomatoes, fresh mint, garlic, feta cheese. It's a modified ATK recipe. Phenomenal!

There's a Ukrainian/Georgian version we've been enjoying where the dough is a bit thicker, so it becomes more bread like. An egg gets cracked on top a couple of minutes before you finish baking to leave a runny yolk, which you then stir into the cheese with some butter when it's served.
As a Turk, i LOVE pizza, but pide is just… at another level. Just like pizza, pide can have a lot of different styles. Most common one is called “kuşkaş” (short for “kuşbaşılı kaşarlı”) which is made with kashar cheese (which is a Turkish cheese type, we call it “kaşar” here) and meat that has been cut into tiny dices

As a turkish guy your pide is approved to be authentic. You even had turkish salca. One thing i can reccomed is crack an egg on top of the ground beef one i usually order one with egg and one without extra cheese is also an option you gone for just cheese which is delish too.

You can also crack an egg inside too on top of the meat and it doesnt have to be seeded. (I honestly prefer mine that way). Also butter the sides after baked

You can also add an egg on top of the ground beef one, I recommend it. Mix the egg before you dump it on though, then bake it normally. You can also add cheese. My favourite pide is definitely mushrooms and cheese pide. I also recommend trying that if you like mushrooms.

Dough
1 & 1/4 cup water
1 tsp instant yeast
1 tsp sugar
3 cups AP four
1 tsp salt
1.5 tbsp olive oil
Meat topping:
Ground beef
1/2 small spinach onion
1/2 green bell pepper
1/2 red bell pepper
Bunch of parsley
1 tbsp tomato + red pepper paste
1/2 finely chopped tomato
1 tsp paprika
1 tsp red pepper flakes
1/2 tsp black pepper
1/2 tsp Salt
1 tosp olive oli
Mozzarella cheese
Akawai cheese
Sujuk (meat sausage)
Shishito peppers
1 egg (whisked, for egg wash)
Sesame seeds & black seeds (optional)
Cornmeal
2-3 tbsp Melted butter
Fresh parsley (garnish)
Baking instructions + tips: Bake at 495 degrees f for 8-14 minutes (until crust has colour). If you bake on a higher temperature, reduce baking time.
*Place an oven safe baking tray on the base of your oven and heat your oven at the highest bake temperature for at least 1 hour before baking. Mine went up to 495 degrees f and | let it heat up for 2 hours before baking my pide.
*use a thin cutting board wrapped in aluminum foil dusted with corn meal to help transfer your pide from the countertop to the oven. Another option would be to build your pide over a sheet of parchment paper and transfer the pide to the oven with the parchment paper (though this may result in less browning on the bottom crust)

Made a different version of these 4 nights ago! Google is definitely telling RUclips what I've been up to, showin me this so soon 🙄.... but for real, these things are better than pizza! We made vegetarian ones with eggplant, tomatoes, fresh mint, garlic, feta cheese. It's a modified ATK recipe. Phenomenal!

There's a Ukrainian/Georgian version we've been enjoying where the dough is a bit thicker, so it becomes more bread like. An egg gets cracked on top a couple of minutes before you finish baking to leave a runny yolk, which you then stir into the cheese with some butter when it's served.
It’s called khachapuri and it’s a Georgian dish. Ukraine has nothing to do with it.

As a Turk, i LOVE pizza, but pide is just… at another level. Just like pizza, pide can have a lot of different styles. Most common one is called “kuşkaş” (short for “kuşbaşılı kaşarlı”) which is made with kashar cheese (which is a Turkish cheese type, we call it “kaşar” here) and meat that has been cut into tiny dices

As a turkish guy your pide is approved to be authentic. You even had turkish salca. One thing i can reccomed is crack an egg on top of the ground beef one i usually order one with egg and one without extra cheese is also an option you gone for just cheese which is delish too.
