in your full instructions, you say blend everything but the oil first. one problem or concern i have: the strong acid from the lemon juice can destroy enzymes in the garlic that help form strong garlic flavors. these could come out if you chop and mash the garlic by hand on the cutting board. but these would get destroyed by the acid if you blend that in first. so i wonder if it turns out different by using the blender and putting the lemon juice in early. otherwise i do recognize that most of the instructions are the same process as making a mayo, add all that oil at the end to slowly emulsify it as it gets blended in.
Close but no cigar. You left out the ... Lea & Perrins and Tabasco in addition to Aged Wine Vinegar.' And as far as the vinegar is concerned I highly recommend an Aged Sherry Vinegar. It's not expensive and greatly improves the dish. It goes perfectly with the lemon juice and adds a bit of complexity beyond the lemon juice. These ingredients will greatly improve this classic dressing.

I cheat and added MSG rather than the anchovies, not the same but similar enough for us and the money saved goes to better quality parmesan cheese. Plus we don't have half used tins of anchovies kicking about.
The original recipe does not have garlic, mustard or yellow lemons and the oil should be olive oil. BTW, you forgot in your recipe to add mayo and ketchup.
I use a more neutral oil like avocado oil since it allows the flavors of the dressing to come through. You can also use a light, fruity olive oil if you’d like.
Its mayo with garlic and anchovies. If you want to make mayo by hand fine, i guess, but if you're not making the salad tableside i see no point as this process is mostly for aesthetics, often in overpriced establishments. Just buy or make quality mayo on hand and stirr in the anchovie and garlic paste with some romano, salt and pepper. Still, a fast and accurate video none the less: i just woulda pointed out using mayo is a great shortcut
Mayo from the store (even those advertised as "olive oil" contain poison oils). Do not fall victim to using that garbage. I just made this recipe and it's delicious. Thank you for sharing the recipe.
