Great video for those wanting to make a terrific Caesar salad. Having prepared Caesar Salads tableside, I do suggest adding a tablespoon of Worcestershire and a few drops of tobasco to the dressing along with some fresh ground pepper. The bite size pieces of romaine lettuce should be washed of course and spun dry, then the romaine placed in a kitchen towel and wrap the towel around the romaine to absorb the last bit of moisture from the lettuce ( the romaine MUST be as dry as possible to ensure a great salad). Toss just before serving.

Caesar salad was invented in the early 1920s by Caesar Cardini, an Italian chef who owned a restaurant in Tijuana, Mexico. He moved to Tijuana from California to avoid Prohibition, and it was here, on July 4th, 1924, where Caesar is believed to have invented the Caesar Salad.
This is what I wrote down, hope it helps. salad dressing: one egg, splash of mustard, add some vinegar or worcester sauce. stir til it thickens while you pour some olive oil. when it thickens add some chopped up anchovies or bacon bits and garlic. then add grated parmesan cheese. to finish add lemon juice and a splash of water. croutons: dice the bread, season with salt and pepper and then add to a hot pan with olive oil and fry. as the croutons turn golden, grate a generous amount of parmesan. salad: slice some romaine lettuce, not too thinly and then add some lemon and our dressing, saving some to cook your chicken. then sprinkle half your croutons. mix that with the salad. then add the remaining croutons and finish with grating some parmesan on top. chicken breast: slice from thin end towards the thick bit of the breast. (butterfly cut) season on both sides with salt and pepper, cook from 3 to 4 minutes on each side. while the cooked slices rest, spoon over some of the reamining dressing. when all the chicken is cooked slice it into strips and serve it warm in a separate bowl.

To anyone who claims Cesar Salad is not "American" but Mexican: Despite the very location of the place the dish was created - an Italian-American restaurant in Tijuana, Mexico - it is far deeper engraned in Italian-American cuisine than it is in Mexican. It's similar to Black Forest Cake which was not invented in the Black Forest Region of South-Western Germany but in Bavaria. The name of the cake rather derives from the cherry liquor that is used in the dough and preserved cherries of the cake which indeed is made in the Black Forest. It is a staple of German pastry and nobody would ever say it's a Bavarian cake.
If you don't have anchovies or if you are very tight on a budget, try to carefully use a bit of Vietnamese fish sauce, since it is anchovy extract. Start with a teaspoon of Fish sauce for every teaspoon of Dijon mustard for the first try.
