    *Weighing Scale (g), Weighing Tablespoon (T), Weighing Teaspoon (t)
    *ingredient
    100 g baby anchovies
    3T cooking oil
    2t minced garlic
    1T mirim
    1T sugar
    2T soy sauce
    2T oligosaccharides
    2t whole sesame
    1 t sesame oil
    1. Shake off enough powder from small anchovies (it helps to avoid burnt taste when stir-frying)
    2. Return the small anchovies to the microwave for 1 minute (moisture and odor are removed first)
    3. Add cooking oil to a preheated pan and stir-fry the anchovies quickly over high heat for 1 minute 30 seconds to 2 minutes to avoid burning, then turn off the heat and stir-fry for another minute with residual heat.
    4. With the heat off, add minced garlic, mirin, sugar, soy sauce, and oligosaccharide, mix well, and stir-fry over low heat for 1 minute.
    (If the seasoning boils down to avoid burning, turn off the heat quickly.)
    5. Turn off the heat and mix with sesame oil and sesame seeds to finish (remove it immediately after tossing as residual heat can burn)
