    Chef John, I made these for Christmas and Christmas Eve last year and they were an ABSOLUTE HIT!!! They got requested again.. looks like these guys will be joining the traditional feast from now on! Thanks!!

    I know this is an old video, but in the hopes that anyone is still watching...I made this for friends tonight. was a total success! As the kitchen was being cleaned up, people were still eating them with toothpicks as if they were hors d'oeuvres! Oh yea, I added a little twist to the dish. I squeezed a whole lemon at the last moment. The lemon was organic homegrown and not sour, but sweet! I think I got a medal for the dish! Thanks, Chef John...if you are still watching these

    You know, I grew up in "a drinking family" in the US and was later diagnosed to have foetal alcohol syndrome, which explained quite a lot. I find it easier to just live an alcohol-free life. My French spouse quit drinking and I thought, hey, I'll try it, too. I was unable to ever resolve any booze issues with either French or American family members, either. Lots of denial going on there -- I left it alone, eventually. I feel for you.

    People say the stupidest things about these vids. I mean, who really care how his voice sounds, or if he has brown or black hair or does his shirt match his socks, or do his poot stink??? Gosh people, get a life!!! Can someone just enjoy the vids and try to get something out of them that could add 'color' to your dull lives!!! BTW: GREAT VIDEO!!!

      Those are the same people that annoy everyone as they critique every commercial and any given aspect of the movie on the now primitive TV. They have not evolved to understand proper internet etiquette. Or they have had too much sugar. :)

      @@DragonflyArtz1 Though I never typed it out, I used to find his inflections really annoying. However, over time they grew on me to the point where they are like 20% of why I watch the video. People who comment about his voice most likely got recommended John's videos by youtube and have not aquired the taste for John yet. Don't insult them, give them time and they will come to believe in our lord and saviour John.

    Great recipe, as usual. One thing to add: Ginger! Carrots and ginger were meant for each other. This same recipe also works amazingly well with chicken in place of the carrots.

    I made this dish for a pre-Easter dinner, last night.
    It's spectacular, and the stated timing for liquid runoff is perfect. It's fun, too.
    The only disappointment for me was that ... due to those pesky ol' "circumstances beyond our control" ... dinner wasn't served until 4 hours, or more, after I finished the dish. People still loved it, and it drew many compliments. However, it didn't have that same special ZIP that my "sample morsels" had, right out of the pan.

      Isn’t that the problem with these recipes. You have to make them before so you can host your guests. I can’t figure out how to do both.

    My mother used to make this side dish when I was a kid. She would call them copper pennies, referring to the color and shape of the carrots. It's a delicious side dish that goes incredibly well with a nice thick double cut pork chop or some pork tenderloin. Our version never had cayenne pepper but I'm sure it would be a great addition, especially for a more "adult " pallet.

      That's a good idea. Probably want to eliminate the sugar in that case. The carrots, butter, and Grand Marnier all would be pretty sweet. If only I could afford Grand Marnier.
      I remeber making mixed drinks as a teen at their place. They had odd ingredients, like Ouzo, Grand Manier and various Creme de somethings. First and only time I've ever had a Pimm's Cup. I don't usually like gin, but loved it.

    I just did it and it is absolutely delicious but instead burbon I added 0,5 cup of white wine and I skipped the cayene pepper and it is sooooo goooddd!!! :)

    Made a variant of this but substituted bourbon and brown sugar with maple syrup (good stuff from a small batch farm in Vermont), cinnamon, nutmeg, and clove. Incredible for Christmas dinner.

    Same recipe. But I do brandy instead of bourbon. I think it adds to the sweetness. Just use less brown sugar.

    To me carrots even "glazed with brown sugar" one have been between ugh and yuk. I just cooked your Bourbon Glazed Carrots experimenting for company on 1 January. Your recipe blew my socks off. Simply great. They will become a regular side dish when I have company!!!! That meal will also include your Prime Rib, Your Mashed Potatoes, Your Spinach Pie, Your Au Jus, your Waldolf Salad, and your Horseradish Sauce. Obviously I just love, and use your site.     I just made this at 3 in the morning with some chorizo, thyme and garlic, plus a baked potato (this is all I found in my kitchen lol) and it sounds crazy, but it was damn delicious!!

    I used to make this Chef John recipe two or three nights a week for a pair of old queens for whom I worked as a private cook. They loved these carrots. I used Bulliet(?) Rye Whiskey.

    As a faithful, old subscriber to chef John I have exercised my rights to slightly (gulp) alter his recipe to suit what I had available......an excellent 25 y/o Brandy instead of Bourbon, micro-planed zest of one Seville orange(small, bitter) and then it's juice added right at the end for the final fast deglaze....(Bourbon is crazy expensive where I'm at (Cape Town) and the brandy is excellent for cooking AND sipping)....The result was exquisite. My guests were demanding my recipe for what they assumed to be my "Grand Marnier Carrots". Of course I rubbed the side of my nose and said" I promised my old chef I'll never tell". The credit belongs to chef John, of course. I've done the same with Remy Martin Cognac and it's (almost) as good...

    OMG If you make a roast with red potatoes all around it- then made a veggie medley in this Bourbon Glaze, mixed it in with those savory beef juices/onion and potatoes...instant wedding proposal! But be careful, it might just be the Bourbon Glaze talking! :)

    I just don't see the justification of removing the most nutritious part of the carrot: the skin. Especially in a glazed recipe. Otherwise, awesome siple and tasty.

      Unless you're using organic carrots you should peel them due to the pesticides. I thought everyone knew that. It won't kill you but there have been recalls due to that

      +itseffinsexxitime Yes, I forget that most people don't eat organic food--to me it is a given but I should have specified that. Carrots are among the "dirty dozen" fruits and veg with the most residue, according to the Environmental Working Group (abcnews.go.com/GMA/story?id=8315670&page=1)

      +John G Organic food doesn't mean pesticide free. Organic food can use rotenone, one of the nastiest chemicals applied to our foods, and still be called organic.

    I usually eat my carrots raw in salads (lettuce, coleslaw, carrot/raisin). I was looking for a recipe for cooked carrots and I stumbled on this one. I will be making this wonderful recipe tonight with Roasted Garlic BUTTER Rib Eye, mashed potatoes and raison/carrot salad. Thank you for this recipe, it will be a wonderful addition to my recipe library!!
    ***Don't complain if this is too much Bourbon or Butter! "You must adjust"....

    I do a dish quite similar to that. Instead of bourbon, I use rum and call it Hot Buttered Rum Carrots.

    Greetings from France. People who eat margarine ... I just don't understand them. As far as I can tell, only DAWN detergent (or its non-green, nasty equivalent) will get that off your hands. Equitable, organic products often cost LESS here and going to the greenmarket 3x a week and meeting the producers is pleasant exercise. Even when I only had time to do it once a week, it was an exciting ritual. My best to you!

    Would brandy work as well as bourbon here? I hate to buy a whole bottle of bourbon I can’t drink (diabetic) just to glaze some bunny food. BTW, proof that carrots are good for your eyesight....you never see a rabbit wearing glasses.

    In my country, cooking with Bourbon would make this simple side dish exceed the price of a 3-course dinner in a decent restaurant. Would corn syrup make a good alternative for Bourbon in this recipe, and would one be able to tell the difference in taste?

      +29render Yes, Jack Daniels is filthy Tenuhsay whiskey. Do not purchase this. You want a nice Kentucky Bourbon like Booker's Single Barrel cask strength.

    I like bourbon, but I cannot understand the idea of adding ti to food. As much as I love some Old Crow in moderation, putting it (or any Bourbon) in foods is always horrible. Just drink the stuff and don't ruing it - and the food - by trying to eat it.

    Yeah... If you make some cookies that'll require a stick of butter and a cup of sugar. And you're just eating that with flour. At least with these you're eating it with carrots. But that's besides the point. Nobody said this was a healthy vegetable dish. Not all vegetable dishes are healthy - ever heard of deep fried tempura veggies? I don't get when someone complains about how fattening something is on a food video that is NOT a healthy recipes channel. Silly people.

    The carrots are not that bad for you... a quarter pound of butter for two pounds of carrots, it's still eating vegetables. Any deep fried item is much worse. If he had made a dessert, would he be getting the same butt-hurt? I am positive it would use a stick of butter and a lot more sugar. I'm sure that even for this special occasion meal, these carrots wouldn't even be the only vegetable served... Go drink/eat smoothies and munch on kale if you want to be a health nut. Leave my butter alone!!

    To everyone saying it's gross and unhealthy to cook carrots like that, Chef John didn't invent carrots cooked with sugar and butter. It's a common recipe, and one he's spiced up with the bourbon, which is good for people who appreciate nice cooking and fine dining, so don't watch a cooking show if you're afraid of anything aside from a salad with cracked pepper on top, jfc.

    Yeah, but our ancestors WORKED out on the farms, did HARD LABOR, and didn't SIT IN A CHAIR for most of the day. So thus, they were healthier because they burnt off all of the carbohydrates and all of the sugars and animal proteins they ate. Get your facts straight before you comment.

    They sure did, but their lifestyle is different to the average person's lifestyle. In particular, I am referring to exercise. John didn't 'bad mouth butter', he said this dish was over-decadent, which it seems it is. Anything that uses that much butter is perhaps 'over-decadent'

    Good argument, except for the part where you kind of implied that the vegetable oil margarine is the cause of high heart disease rate. That's definitely not true. The real problem is the amount of food in general Americans consume.

    I just discovered your channel and glad I did. To hell with the Food Network you are my guru. I am going to make these carrots tonight. If as decadent as I think they are I will spend an extra half hour at the gym tomorrow for God sakes!

    1) You eat it once or twice a year.
    2) It's really not that unhealthy
    3) If you don't work out and are already a fat shit anyway, eating a stick of butter will not concern you.
    4) Really just work out and you will be just fine.

    No, he's not. He said it's a special occasion. All the advice and research on dieting indicates that people who do occasionally cheat are better at maintaining a healthy diet than those who rigidly adhere to a diet.

    Butter is fine in moderation, but it is also safe to say that our ancestors had a low heart disease prevalence because they died of other things first, like syphilis, tuberculosis or the flu.

    Just like cooking with wine, using something that tastes better, regardless of price, is probably going to be better. It just so happens that better tasting beverages usually cost more....
