    11 years later and I just tried this for the first time. So simple and perfect. Served with a side of sour cream and chive for dipping. This is how I’m cooking red potatoes from now on!

    Made tonight in toaster oven. Used higher temp 425. Added rosemary after 1st 30 minutes to lessen burning. Came out crispy and delish! Thank you!

    The best part about this dish is how brutally easy everything is and how long it can stay warm. It's so hard to make side dishes when you're the only one in your relationship willing to cook. I scale this down to 1 potato per person for 2. It takes a little planning, but about ~3 minutes from the time I get out everything to the time it's in the oven and basically cooks itself while I'm making the main course for the two of us.

    I like to add chunks of yellow onion and garlic. It gives the potatoes awesome flavor and has the same caramelizing effect of the peppers.

      Yes! Can't have too much onions (preferably red) and garlic (never quite enough). And btw keep the red bell pepper as well. Good eats!

    I just tried this recipie and it worked great. The different intervals of time and moving the potatoes around after each interval definitely makes the difference.

    Chef John....Tried them today...came out P E R F E C T. The flavour from the peppers and the herbs combined. Crusty on the outside. Soft on the inside. It was such a homey comfort dish to have and share with the family. I made you proud.

    Chef John, I also love to cook(vegetarian) and feed others. Your sense of humor is awesome while cooking. Cooking should be fun and relaxing. Your cooking videos are the best. Anyone can become good at cooking provided they cook with interest and some right ingredients. If you love to feed others, it will be reflected in the taste. Thank you for sharing the videos and above all motivating others to try and have fun cooking. I made vegan version of your chocolate souffle and it came out perfetto!

    Yesterday, we had some red potatoes in the pantry and wanted to add peppers as above. My wife grows "Jimmy Nordello" an Italian red frying pepper which grows well here in Sonoma County. It was out of this world - you really have to grow and try these "Jimmy Nordello" peppers - here they caramelized and became almost like pepper jerky - crazy good flavor. Thanks for the recipe!

    Having spent the month of August 2019 in Levis, Quebec, I discovered the best potatoes in the world. They are grown on the island of Ile d' Orleans on small family farms. The skins are so thin that they almost aren't even there. I cook them in boiling water and then toss in duck fat which is fantastic and available everywhere here and with add some chopped red onion and a tiny bit of grated garlic, salt and pepper and it's like no potato dish that I've ever had. Back to the USA tomorrow and I'm already getting sad for the great fruits, vegetables, duck, veal and other non-factory food available up here north of Maine on the Saint Laurence River.

    hehe..my mom used to make the same..but she added a bit rosemary, some garlic cloves, lemon slices and some chicken drumsticks/wings..so the potatos suck up some yummy juice..and the leftover juice in the pan makes a great "sauce" too ...experiment is what makes a good chef..and mommys are the best chefs ever..i bet even chef john would agree =)

    2 pounds red potatoes, cut in evenly-sized pieces
    salt, pepper, cayenne to taste
    thyme sprigs, add whole and remove barren twigs after cooked
    1/4 to 1/3 cup olive oil
    1/2 large red bell pepper, seeded, cut in chunks

    I love potatoes prepared this way. I used little yukon gold and I could eat the whole plate too! My grandma would make hers with the roast I would die for them!! The flavor was insane!!

    When my dinner guests ask "How do you get your potatoes so crispy? Mine are never as good as these?" I then reveal the secret name of my recipe, "Oh Shit The Potatoes!"I put them in a hot oven, and usually remember to toss them at least once, and then go on with my other dinner prep. When we sit down to eat and everything is present at the table, I exclaim "oh shit, the potatoes!!" and at this point they are always always perfectly crispy and delicious, it's fool proof!

    Chef John..I know this is an old video, but I used it tonight to make some potatoes as a side dish. It came out fantastic. The only thing I added was some slivers of Carolina Reaper peppers to the mix. It jumped up your cayenne a little bit.

    very nice of you. :-) I am not a big fan of raw onions, but when I smell some cooking on the stove.. you might find you like them in other things okay, but I always cook them first - caramelized before putting into my meatloaf, etc. Or you may not, of course.... I'm a bit too picky to judge (and a pepper hater to boot, lol).

    I have prepared this many times with great results!...my only modification has been to add the red bell peppers at the first 30 minute toss. My oven seems to overly cook them...not in a bad way, still very good, except they turn almost completely black even when cutting into larger chunks. I toss in at the 30 minute mark to get the charred red color shown in Chef John's video. Not all ovens are alike.

    Ooh, this looks good. I've only ever done the Kenji Lopez style or straight roasting in a baking dish on their own. I'm going to try this out tonight and see how it pairs with some Pork Chops.

    Definitely like rosemary better. Also, I drizzle a little olive oil over the top. It eliminates the need to keep turning them.

I love Chef John's stuff, so I'd probably just leave them out and try to make this, but apparently being a pepper hater is taboo among FoodWishers. :-)

    i usually expand on this by adding bacon in the tray and also some garlic and in the end when they are almost done i add lots of balsamic and let it boil and caramelise.

    I made these and they were so delicious. The red pepper does make a big difference. Gave alot of delicios flavor. I Did not have to cook mine as long maybe about thirty five minutes and they came out crspy on the outside and tender on the inside. Thnk chef 😉

    The only thing I do different is use a big bowl and toss the potatoes & olive oil before I put them into the pan - which also has olive oil.

      you´re doing good. in profesional kitchens, that is what most cooks do. you get an even coating of oils, herbs and spices. i like to add the last 5 or 10 minutes my fresh herbs, that way they don´t come out burned.

    One ingredient, only potatoes. It's not easy because it needs care. The result is as you see it on this video.
    I added a splash of water and a "bit" of butter. A dream!

    I made these tonight and were awesome but I over generously salted. I also combined the pan fried chicken breasts with chicken breasts and mushrooms. Chicken was done before potatoes and over salted again but super good! It will be better next time. But I will never be as good a chef as you :)
