If you marinate the tempeh overnight in that broth you made then you can just bake it along with the potatoes. Marinating really makes a difference in the tempeh it gets rid of that bitter kick. Great recipe though, will definitely make it. Thank you!!!
Roasted oil free veggies are wonderful! I like to toss with fresh chopped herbs like basil and parsley after roasting. And I take leftover roasted veggies, put in my 9” cast iron skillet, maybe add some vegan cheese shreds, get a bottle of Just Egg, shake well, pour over the veggies and bake at 400f for about 20 minutes. Yum!!😋

I made this last night, and it is REALLY good!! This is similar to a recipe I use that calls for steaming the veggies, but this is so much easier!! There are far fewer pots and pans to clean up. I followed Jill’s recipe exactly with no substitutions. The only thing I did differently was that I added caramelized onions at the end and then topped it all off with chopped avocado. I bet it would be good to add chopped fresh tomatoes when baking the veggies. Thank you, Jill, this is definitely a keeper!!
I also used a silicone baking mat instead of parchment paper. I find that much easier and cheaper in the long haul. An 11” x 17” mat perfectly fits my rimmed baking sheet. The mats wash up quickly and so easily.
I made it today but had it for my dinner, and had smoked tofu because I'm not keen on tempeh. Really delicious will be doing that regularly I can see. Thank you.
That looks so yummy! You don't need to use parchment paper. You heat the pans in the oven for a few minutes then you put the veggies and they don't stick. It's great!

What can I use for protein to replace soy products if I don't want to use whole beans. Would a sauce made of beans and/or cashews be okay? I can't wait to try this!
I'm like just cook the same amount and eat it for lunch and supper. You can always eat some sides to change it up a little if needed. Couldn't you just marinate the tempeh and then bake everything all at once? I'm all about simple.
Made this tonight and while good I think I ran into a problem with measurements....we don't have Russet potatoes here so I was just going by own judgement but didn't get it right..also as I don't eat peppers it was difficult to get ratios correct. What are the weight of the potatoes and combined other veg you used please? Thanks a mill.

You (and many others) say use liquid aminos ....or low sodium soy sauce if you don't have liquid aminos....so there must must be a reason that liquid aminos are your first choice. After some checking, it seems that the aminos actually have MORE sodium than regular soy sauce, so why the aminos? And why recommend low sodium soy sauce if using a soy sauce instead of the aminos if even REGULAR soy sauce has less sodium than the aminos? Please know that I ask not to be an argumentative ass, but because i really want to know. Cheers and thanks for a great channel!
Braggs is gluten free. Tamari is also gluten free but most soy sauce has wheat in it. Braggs is 320 mg per tsp. Regular soy sauce is 291 mg per tsp, low sodium soy sauce is 177 mg per tsp , tamari is 335 mg per tsp, table salt is 2325 mg per tsp 😳😳😳😳. We use Braggs mainly because of it being gluten free and less sodium than other gluten free options like tamari and table salt.
