- This is a meal that is so quick and so easy that’s insane!!! Best part of this meal is that the options are limitless. There are so many options to add to this to make it even better.

I think it looks great. One thing I would change is to fry the corn tortillas before adding. That one change can add tremendous flavor and texture.

Had every ingredient on hand, including the rotelle tomatoes! Sautéed onions, peppers and shrooms. Success!! I was going to make gumbo for a gathering I was invited to... not now! I will take this delicious, simple, inexpensive dish. Thanks!!

I Make this almost exact recipe but with lo carb tortillas. It is so good with just a side salad and maybe a small dollop of sour cream. Black olives are good in it too.

We Hispanics love adding toppings sour cream like Crema Fresca Guacamole Salsa Pico de gallo black olives yes so many it just brings it to the next level 😂

Lol you know, I found a recipe today that called for cream of cheese soup and I said to myself, “self, I bet that would have been really good to use in the Mexican casserole dish.” Lol
I’d definitely prefer cream of cheese instead of cream of chicken. Chicken makes no sense to me with ground beef.
Then use cream of chicken
Cream of Celery soup is also a good option.

I make something simular. I use enchilada sauce and cream of mushrooms. I use flour tortillas because that is what we like. I rip them up and make several decent layers. It is amazing!
I had followed a recipe for this one. I prefer flour over corn but the recipe said that the flour tortillas would get soggy. Didn’t chance it. With all of the flavors though, it was pretty good with the corn tortillas.
Man, I can't believe it. You always post right as I am settling in for the night after work. I just looked down and you posted this one minute ago. This meal looks good, if I make it I might try and put tostatas in the middle layer instead of tortillas
The thing about this meal is that there are so many options!!!! I was kinda halfheartedly joking when I used the F-150 analogy but at the same time serious, there is so much to be done to this meal to make what is already a delicious meal, even better!!!!!

I made this after seeing your video and it was FANTASTIC!! So easy to make and so good. I did sub the beans but that didn’t make a huge difference. I will make this again and again. My middle layer was refried beans and cheese. Thank you for the idea and inspiration for a great casserole.

Hey friend! Sometimes method can turn a dish from a short wide to a long bed. Take those tortillas and fry them first! Some may tell you just put them in a hot pan just enough to make the fat in the tortilla soften, pliable, hot to touch but not too hot to handle. Then you will flip, repeat. But I suggest using an oiled skillet and oil up the tortilla. (if you had a gas cook top you could use that flame or better yet, chargrill, oh baby!) What ever way you choose will take that sleepy dormant raw corn flavor and awaken it before you bake your casserole! Will only add 5 minutes to your 30 minute record.
This method will add more roasted flavor in layers and dimension and make this casserole a King Ranch XL I promise!
~ For example: You can take fresh bread and slap cheese on it for a cheese sammy, but you fry it in a skillet toasting/grilling that bread...game changer right? Same thing.

That looks so yummy 😋. I've made a similar casserole. I cooked onions with the meat. I also made it with sausage & hamburger. My SIL uses chicken in hers.
One of the things I loved the most about this recipe is that every part of it can altered and changed to preference.
Looks delish!!! Might have to give this one a try. Only tiny thing I would have done different is grade my own cheese, it’s a little better than bagged cheese. I’ll admit though, I still use bagged grated cheese when I’m in a hurry.

Looks yummy. I've made something very similar that had a cup of sour cream layered in the middle.
Funny you said that cause I put some sour cream on the piece that I had eaten and then told my wife that I bet I could put some sour cream on this when it cook next time lol.

Looks delicious , try it with nacho cheese Doritos instead of tortillas , Doritos casserole made with ground beef can rotel taco seasoning can of mushroom soup cheese basically the same thing only with crushed Doritos, layer Doritos meat cheese Doritos meat cheese bake it , pretty good stuff
The Mexican chicken casserole is very similar to that of course rather than ground beef, it’s chicken. So many variations that can be done with this recipe. That’s one of the many things I loved about this recipe.
