      Yes, I can even remember now that it was a very moist cake (lot of fat!). And she did look rather sly and quite self-satisfied when eating it!

    I forgot how much I liked raising bread. Haven't eaten it since going vegan because, you know, butter. Definitely will be making this soon.

    Thank you for this great recipe.
    I must say ...
    I find the dough needs a substantial addition of flour when using a whole cup of plant milk.
    I added nearly another 3/4 cup !
    It turned out deliciously !

    I would just take that bread and eat it like how someone would eat a steak or a piece of chicken. Wouldn't divide it into slices to share with anyone, I'd just eat it by myself! It looks THAT delicious!

    Have you tried other more whole grain flours? I've only seen you use all-purpose. Looks yummy!

      i have. I used to do a lot of baking in my 20's and tried all sorts. I use AP in videos because it's more accessible to most people AND gives the results people expect for classic breads we all know and love. I will occassionally share recipes with other flours but I will continue to stick to the most accessible types. Thanks for asking!

    Wonderful recipe! If you do use unrefined coconut oil and the bread has a bit of a coconut taste, I suggest making the glaze with either rum or rum extract. Coconut rum raisin bread, anyone?

    Oh, I made raisin bread just the other day. My issue with it was that it was a bit loose at the level of the cinnamon swirl, like your first loaf seems to be. It was delicious but kind of a pain to toast or make french toast with. It kind of unraveled itself. The look of your second batch (with the icing) is what I'm after. Everything is nice and tight inside. What did you do differently? Not flattening it out as thinly before rolling it and placing it in the pan?
    I'll try another one with your recipe soon.

      The difference was all dry ingredients went in at the same time in the beginning with the second batch (the iced one). Also, a spritz of water to help the fillings stick.

      Thanks for answering so quickly. I added all my ingredients at the same same when I did mine though. And I didn't spritz with water but I did brush some melted vegan butter on the dough, which helped the filling stick. So I don't think that accounts for the difference.

      @@nymeria8852 brushing on butter will contribute to layers separating. Water helps bind, oil helps separate

      @@jonothandoeser honestly, I wouldn't. Cats don't taste sugar anyway but it can be bad for their teeth. A little probably won't harm but I wouldn't feel good about it.
