Nice, I really appreciate your videos. I had similar inspiration not too long ago. I made chicken alfredo lasagna using unflavored greek yogurt for the sauce (Instead of the cottage cheese you use here), incorporating it last to collect all the flavor from the bottom of the pan and melted cheese bits. Admittedly, I could not use very many lasagna noodles to keep the macros under control, but it was delicious and gave me enough of the lasagna experience that I was looking for. I also recently made a white enchilada variation, again using yogurt instead of making a rue, but left out the tortillas for scalloped potatoes in their place. The dishes were not only great protein sources with calorie counts that fit my diet, but the casserole-like proportions were also meal preps for my work-week. Keep on cookin'!
Have you tried the protein pasta from Barilla? It tastes just like regular pasta (it is regular pasta but with pea protein added). It's a great way to get significantly more protein into a pasta dish without affecting flavor whatsoever.
I'm surprised you didn't use the magic or miracle noodles you have made dishes with in previous videos. As an Italian guy, I appreciate the creativity, looking forward to trying this soon, thank you.
Try different brands of 1% cottage cheese. I've tried several and it's surprising how much of a difference in flavor there is. My favorite by far is the Friendly Farms brand found at Aldi in the US. It's actually the least "flavourful" that I have tried, but for me that is a good thing.
