    • 1 cup whole urad daal, soaked
    • 1 cup green whole moong daal,soaked
    • (3⁄4+1⁄4) cup water (for blending)
    • 1⁄4 cup psyllium husk (isabgol)
    • 1⁄4 cup jaggery powder
    • 3 tablespoons flax seeds, roasted
    • 2 teaspoons lemon juice
    • 1 teaspoon rock salt
    Topping
    • 1 tablespoon flax seeds, roasted
    PREPARATION
    • Soak 1 cup green whole moong daal in
    water for 12 hours.
    • Soak 1 cup whole urad daal in water for
    12 hours.
    METHOD
    1. Place the whole urad daal and 3⁄4 cup water
into a blender and blend until smooth. Take it
    out into a big bowl.
    2. Similarly, blend whole moong daal with
1⁄4 cup water until smooth. Take it out into the
    same bowl.
    3. Mix both the batters together. Cover with a
plate and put it to ferment for 8 hours in a
    mildly warm place.
    4. Preheat the oven at 200°C for 10 minutes.
    5. Add the remaining ingredients into the
fermented batter and mix well using a spoon
    to combine everything together.
    6. Pour the batter into the greased loaf bread
tin. Tap the tin to even out the batter and add
the topping. Bake at 200 °C for 50 minutes.
    7. Allow the bread to cool down for about
15 minutes before removing from the tin.
    8. Slice, make sandwiches and serve.

When use the words like ‘clean’ and ‘toxic’ for foods it promotes unhealthy relationship with food. The best advice about nutrition I have heard on YT is “think what you can add to your meals and not subtract from”. So, if you take one or two white bread, add some protein (egg, paneer, peanut butter) and some raw veggies you have a good meal which will keep you full. However, if you eat half a loaf of “clean” homemade bread, you are still eating empty carbs. The more you restrict yourself from eating a particular kind of food, the more you will crave it. At least that’s true in my case.

You just shouldn't constantly eat white flour products or if you do mix them with high fiber ingredients, to bring down the glycemic index. Yes there are people who eat white flour products with little fiber rich extras every day and get over 90. Helmut Schmidt got 96 and smoked menthol cigarettes like a chimney, but most of us wouldn't make it this long with this kind of lifestyle. In the end you can eat what you want, just making suggestions here.

    • @upamanyu.baishya
      @upamanyu.baishya 13 дней назад

@@Mnbvcxzlkjhg1 Maida is just carbs, don't eat over your daily calorie intake and you will be fine. At worst it'll make you obese. It's not toxic. I'm skinny guy so I need more carbs so I can eat alot of maida or just any carb. Adjust it to fit your daily carb requirements. An average adult male with daily diet of 2000-2500 calorie will need around 250g of carb. He can get that carb by eating just 20slices of bread but in doing so he will be so full for the day leaving to space for other nutrients and food. Therefore, moderation is key. Eat like 2slices of bread as toast each day that'll give you like 30g of carbs of your daily need of 250g. Complete the rest of your goal of carb by eating more nutrient dense and calorie dense food that doesn't make you full but also provides more mircos and macros like a spoon of peanut butter, a side of veg and 2 eggs etc. In short bread isn't bad, it's just people don't know what even is a diet. They'll just eat whatever they can find

Or simply use any bread as carbohydrate, control the quantity and get the nutrients from side dishes. Here in South, we eat white rice for generations and nobody considers it unhealthy even though it is just as healthy as white bread - empty calories. That is fine as long as you control the portion size and veggies and meat to get your nutrients.

Would like to bake this bread.
Regarding Jaggery powder; does it have to be Palmyra jaggery? Jaggery available outside India is sugarcane jaggery (not advisable for diabetics). Is there any alternative suggestion? How about Molasses Sugar? Can the Molasses sugar be a substitute for Jaggery? Looking forward to your suggestion. Thank you.

No, check out the brand "The Health Factory". They only use atta, sunflower oil(Hexane-free), gluten, vinegar,
cane sugar, salt, yeast and water. See no palm oil, emulsifiers, preservatives, etc.. They are honest just like "The Whole Truth".

Atta bread, also known as whole wheat bread, is a bread made from whole wheat flour. It's a good source of fiber and nutrients, and can be used for breakfast, sandwiches, or toasted with butter.

I eat brown bread and its 100% wheat bread 🍞. I have read the ingredients and the first thing it says there is wheat ( atta ), and doesn't have maida written anywhere. So not all packed breads are just maida ma'am.
And I have seen the maida( white/brown ) also, it is around 50-60 RS and so is my 100% wheat 🌾 bread. ( Here in district of Karnataka, Urban Bengaluru. )
