Taking it off and then searing to 120-125 gives the steak plenty of time to develop that beautiful crust without overcooking. While searing I like to baste the steaks in a rub-infused oil and then apply a finishing coat of the infused oil while it’s resting to give it additional flavors.

Not the case at all. Cover it with aluminum foil on a wooden cutting board for 10-15 min. Hot perfection.
