I watched this video last night and decided to see if his way worked. Unfortunately I did not have a wood burning stove, or even a propane BBQ. All I had was an electric stove and a cast iron frying pan. The pan did have ridges, making it sort of like a BBQ grill. And instead of a really good piece of steak, I used a piece of boneless sirloin that cost $3.98 per lb. I put the burner on high, let it get really hot and then put on the frying pan and let that get totally hot before putting on the steak; which I had salt and peppered. I did exactly as Robert said, seared both sides before lowering the heat and then letting it gently cook before removing and letting it sit for about 3 minutes. This inexpensive piece of steak turned out very tender, perfectly cooked and truly delicious. Thank you Chef Del Grande.
@100forks WOW! Thank you for trying this method and sharing your success story. There are many people comment about not having a commercial wood burning stove as Chef Robert's in the video. Your testimony is another example that Chef Robert's technique of heat distribution works with any cooking device, cut or quality of beef. Great job! 👨🍳 🥩 Bon Appétit & God Bless!
Always cure a cast iron skillet before you dare use it. If you don't that's a sacrilege. I myself have never washed mine. When it's still very hot I just let water run in it to rinse the liquid grease in it out. Then I just put it back on the cooling element on the stove and it dries naturally and never a spec of rust forms. I grew up without a BBQ, so I taught myself how to make steak like a restaurant when I was 12 in 1970. Until then all steak and roast in the house was white and dry. Ugh. Anyhow, I could create a steak that you could cut with your finger, or no pressure at all on your knife. I have always just used a rub of peppers and garlic powder. First I would turn the stove element up to cremate and let my skillet get almost red hot. The previous years worth of goodness on it would start smoking all by itself. I would then cut some of the side fat off a New York cut, and use that to grease the cooking surface. The apply the meat. Total smoke show, and 3 minutes per side if 2 or more inches thick. As the chef said, it was always to sear the juice in. Hah, I have learned something new today, the heat scares the juice inwards lol. Anyways, it's the easiest steak you'll ever make and automatically excellent every time. Buy a good thick iron skillet and cure it your own way. Warning, never let a wife wash it!!!
Great comment. I agree as I don't have a wood burning stove; that's why I go to steakhouses :). I, too, only have a cast iron skillet and electric oven/stove and an outdoor coal burning BBQ. My gf has a propane BBQ. The method still works. I touch the steaks with my tongs to get an idea of done ness. Even if you don't sear it completely, then let it sit and not let the juices run out.

Yes, i do agreei very nice way with the video on how to cook a perfect "STEAK 🥩" OK I PERSONALY LIKE MINE ( medium) rare.EVERY ONE ENJOY YOUR" STEAK,S OK
when he said " when you hear the juices hitting the coals, it's at least medium at that point" it just clicked with me. No one ever goes into such detail with what seems to be fairly basic information, once you know it. it doesn't seem like many RUclips "stars" know this. Also it makes total sense that you could have a juicy well done steak the way he explains it. Unfortunately, most peoples well done steaks ARE totally dry and tough because of the lack of this technique , and that's why most people don't like it cooked that long. I love this guy!
Dang that steak looks super yummy delicious ….. thanks for a few key grilling points … I wonder since I’m 10 years late if anybody will ever see my comment.

Did you flip the steak at all once you pulled it to lower heat? Also, did you initially have the entire grill very hot and turn down the right side after searing or was the right side always set at a lower temp?
I watched this a while ago. I am a cook at a cafe. I used this technique and one of the first times a customer came back and told me this; " I am a steak perfectionist and this is the best steak anyone had ever served me." I continues to use this technique and today I tried some practice steaks from quik trip. They were 99¢ for a 4 oz steak. They were perfect. My wife's steak was done with an even color all the way through. Medium rare and also juicy. Real juicy. Mine was medium. Now I try to teach this to the other cooks. Thank you for the best tutorial I have seen so far.
@likwidsay10 WOW! This is amazing! Thank you for sharing your experiences using this technique. What is the name of the cafe where you are a cook and where is it located? 👨🍳
This has been the most thorough and realistic understanding and comprehensive process of cooking a steak. You know, I have watched Gordon Ramsay, Jamie Oliver, Marco Pierre White and have learned quite a bit from them. But I have learned more about cooking a steak here in the past 9:00 minutes. Then all of the other chef's videos combined. Just an Absolute pleasure to watch Chef Robert Del Grande drop Knowledge and educate like a true master.
Huh? What? This video is performed over a wood fire at temperatures that you will never achieve at home in your kitchen. Better that he does a video in his home so his instructions can get real and practical. This was a waste of 9 minutes of my life!
@@michaelsalmon6436 Well he shows the fire at 1:11. So the fact that you still watched for the next 8 minutes to simply complain about it in the comments shows your level of stupidity.

This video was actually extremely helpful to me when I started working as a grill cook. Finishing off slowly is the key to letting the steak cook evenly. I always a get a laugh out of the idiots who claim the best way is to cook the steak is to sear it in a cast iron pan, then, put it in the oven to roast. That gives you a beautiful looking steak with all the flavor you will get from a package of Oscar Mayer lunch meat.

THE BEST video on how to cook a thick ribeye (Accept no substitutions). i did this on my Weber with oak wood, heating up 1/2 of the grill to about 500 degrees and pulled the steak to the cooler part (lid off) to finish. Perfect crust. Very tender. Pay special attention to Chef Del Grande’s tips about drips and sizzling, it’s like the zen science behind the process.
this Chef spoke well, gave us useful knowledge and understanding of how to prepare a magnificent steak, speaking to us about how to sear, how to move from very hot to less hot area of grill, why we let the finished steak rest, and then he showed us how to slice it. This is one of the best cooking videos I've seen. For steaks or anything. You explain things well, and what you say makes sense. Your open fire grill makes my Char-Broil infra-red look like a kid's toy. Many thanks.
I learned the method I use from a local steak house that allows you to cook your steaks yourself. As the chef mentioned using high heat and then lower heat during the cooking process. 1-2 minutes on high heat, also depends on thickness of the cut. Then slide down to low heat for 6-7 minutes. I don't turn the meat as the chef does when on high end. I turn the meat and place on high end again, same time for high then slide down to low, for last 6-7 minutes I let the steak rest for a good ten minutes before serving. I like my steaks medium rare and this way has never failed me. Salt and pepper are the only seasonings I use.

Great vid... Been doing my steaks this way for years, on a Weber grill with charcoal, but yeah... Same way.. Instead of charcoal in the middle of the pit, I stack it up against one side... Sear for one minute on each side, then move the steaks to the other side of the grill to finish.. Great method, and the steaks always come out fantastic..

Agree most of what this guy offers with the main exception of his wood burning fire. Most people don't have the proper grill equipment for wood burning plus the effort to get the fire and coals at the correct temperature (which he didn't explain) just aren't practical at home. The alternative: charcoal. Burns hotter, easier to start and regulate and cooks more evenly overall.

Awesome demonstration. This method will fix my issue with the gray band on the outside of the steak. I usually salt mine 1 hour before so the moisture has a chance to reincorporate into the meat. Is that a no no?
David, i too think that salting the steak hour ahead is correct. The moisture/juice salt pulls out get suck back in. I am not either friend of rubbing that steak olive oil that burns quickly, same for the pepper before grilling. But then i am not chef. There is a great video on steaks by french Chef Jean-Pierre (ruclips.net/video/lVcTvHTn6Dw/видео.html) i think who explains a lot around. This one has very good the grilling part itself, which is specific to grill, in my humble opinion. I did see as well video by a grilling champion in Austrian TV who did not salted at all at start. His idea was to actually taste pure meat. He did put olive oil with rosemary on grill hot zone and coated the steak in it, adding salt and pepper at the end when steak relaxes and juices spread around. I did try it, it was different. Surface had different taste as inside. Bottom line i guess it depends on ho you like it. But i would love to taste the steak in video above. ;)
@@PetrVita It is interesting how these great chefs differ in their interpretation of the 'perfect' steak. With so few ingredients, technique and subtle nuances affect the final product. I have been cooking steak for many decades and I, too, am pretty set with my 'perfect' steak. The 'salt right before' crowd wants the pure beef flavor and a bit of salt flavor in the crust whereas the dry brine crowd prefers the meat thoroughly seasoned. While I have never seen frying in olive oil (for obvious reasons) I do know that the burned olive oil on the crust does provide an interesting flavor profile, which is not wrong or overpowering.

Been grilling and BBQ'ing and listening to every bit of advice I can pick up . . . . without a doubt this is the BEST free advice I've heard AND I learned a couple of new things. THANK YOU CHEF!!! Unpretentious - - - explanation that makes sense - the only piece I'll add is that cooking to temp versus cooking to feel is a real art that requires a whole bunch of experience. The difference between a steak cooked to 125 and 135 is HUGE and, can be only a matter of a few tens of seconds more. . . . . . . so, I'm still stuck cooking to temp and havent mastered the feel thing yet. If you arent cooking a dozen steaks every evening - my advice is get a good thermometer and learn to set it in the heart of the steak.

Andy Black Bravo sir, the concept to let a steak cook on lower heat longer as to not drive the juices out of it is very well put. Most people sear a steak way to long trying to get to well done quicker and dry it out. The sear creates the crust and the heat temp and cook time creates the doneness. Very informative video. I’d say the best demo of cooking a steak to how you want with seasoning and basting tips in between constructed perfectly. You sir, are a Pro.

I never thought I could possibly enjoy a well done steak but Chef Robert has taught me otherwise. Excellent video thoroughly explaining the technique and best of all it works perfectly. Thanks for the info.
@juday won Thank you for sharing! We are grateful you found the information useful. A Well Done steak can be Done Well. Chef Robert Del Grande's technique of heat distribution works on backyard charcoal grills, gas grills, stove tops, pans, iron skillets, even camp fires. We recently Pinned a Subscriber's Comment that reads, "I watched this video last night and decided to see if his way worked. Unfortunately I did not have a wood burning stove, or even a propane BBQ. All I had was an electric stove and a cast iron frying pan.The pan did have ridges, making it sort of like a BBQ grill. This guy is a true professional who understands the art of cooking, and enjoys what he does. Plus he speaks well, knows what he's going to say before he says it, and uses exactly the right words to convey his meaning. Which makes it all the more a shame that his video is ruined by the utterly unprofessional auto-leveled sound recording - the video equivalent of taking a perfect cut of meat and cooking it badly.

@rob1958bc Thank you for sharing this detailed information about iron skillets.

Simple is all he knows. He has no choice but to keep it simple.
the only 'perfect' steak is an eaten one!
when he said " when you hear the juices hitting the coals, it's at least medium at that point" it just clicked with me.

I turn the meat and place on high end again, same time for high then slide down to low, for last 6-7 minutes
I let the steak rest for a good ten minutes before serving.

Completley agree..this guy knows his craft incredibly well..for me its cool to hear somebody speak my language.
So you're the expert he needs to be consulting with. I'm sure he'll be glad to find out. LOLOLOL

finally a tutorial on how to cook steak thats different from all the other steak cooking videos.
Thanks for such a fantastic video. I tried this for 10 family members this past Sunday and got nothing but rave reviews, even from the family critic who declared that she wouldn't like it. Best steak I've ever grilled. Sir, you are certainly a Master Chef.
Btw, I grilled it on a charcoal grill.
Try it on strangers first. Your family will blow wood-smoke up your anus 99.99% of the time.
Have decided to move from charcoal in my Weber kettle to Wood only.

Right now I feel like a steak, chips and pepper sauce. Salivating. And a beer.
SAME!! My stomach's producing Whale Songs .. some bastard stole my grill last Christmas. It was nothing fancy .. gas. Nothing's sacred anymore.
@Koa Austin little bitch
Wow!!! This video was explained and illustrated extremely well. You could have been an excellent teacher. Thanks for a job well done.

I've been grilling my steaks this exact method for a while now and I couldn't be happier!!
Although I can't get my natural gas grill that hot, I've always kinda done it this way.
One side about as hot as I can go and the other side on low. As soon as I I'm done searing and making grill marks, those hot burners get turned off.
Wood fired would be nice. Excellent video.

ohh Yes , this is the real prefect and correct way of grilled steak.
I totally agree with chef Robert but we really need to educated every grilled out there. Keep the good work from Malaysia.

Bravo sir, the concept to let a steak cook on lower heat longer as to not drive the juices out of it is very well put.
@Andy Black WOW! Thank you for your gracious compliment. We are grateful you found the video informative. Thank you Chef Del Grande."

I enjoy rare steaks, seared on a really hot cast iron griddle then allowed to rest, but wow, cooking this way using the really hot sear and then a lower heat to finish has really opened my eyes to how steak can really taste, even when cooked medium or dare I say well done. I never thought I could possibly enjoy a well done steak but Chef Robert has taught me otherwise. Excellent video thoroughly explaining the technique and best of all it works perfectly. Thanks for the info.

I come back and watch this video every year before bbq season.
