I cooked a 3lb at 225, it took 2 1/2 hours to get to 130 ??? Don't know how a 4lb cooked in half that time. I would probably have liked it a little more done but I couldn't wait any longer. All in all this was a great steak, it was so juicy and flavorful.
@@KennasKitchen I used diamond crystal kosher salt. It’s been dry brining for almost 24 hours. I made sure to coat the entire tomahawk. Would a small layer make it too salty?
@@oalha001 honestly that is up to preference. If you feel like you already did a lot of salt, leave it off. But if you like salt, like I do, do another light layer with the rest of your ingredients, and then give it a go! Worse that happens is it’s a little salty, and you have to cook another tomahawk steak to get it right 😏 win/win
I buy them at meat markets, such as Wilkes or Pattons! But sometimes Publix has them on sale. Also, this cut is the exact same as a bone in rib-eye, which you can usually get at any grocery store. The only thing different is it doesn’t have the long bone attached! Actually cheaper per pound as well because your not paying for all that bone!
And if you dont have a skillet to sear, take the steak out, turn your oven to high broil and let it preheat first before putting that steak in for 1 or so minutes on each side. Just watch it carefully or you’ll burn it cause the searing happens quick!

I just need to figure out how to ventilate the smoke so my apartment doesn't look like a casino at midnight and constantly set my alarm off. I have seen some reviews on this skillet and I think it will do great for a steak like you have. Thanks again for all of your videos and cooking tips.

It’s hard to say, because it depends on thickness. If you have an instant read thermometer, star checking after an hour. If not, I would say about an hour and a half at 225 will get you to 120 degrees

Hi Kenna, just wanna let u know the steaks went terrific! So good with the method I learned from you. The dinner spread was just splendid 😋 I made 2 tomahawks and one piece was just cooked with medium rare just how I like it, the second one was a bit smaller than the other, so it's just cooked to medium well I think. Overall, the meat was hella tender and the kosher salt really helped to elevate the flavour! We can't go out due to lockdown in my country so a nice birthday celebration at home is way to go x

If I remember correctly roughly an hour and a half...but I really suggest a meat thermometer to cook to temp rather than timed cooked for larger cuts like this.

I have the Samsung dual wall oven flex zone, and it has the convection option as well. I really like it so far. During this particular bake, I didn’t use the convention part. Just normal bake!

The problem with most of these RUclips videos is that they don't seem to provide any help with either a convection oven or fan oven in Celsius or even the Gas Mark number. Not all viewers can understand Fahrenheit and also we have 3 scales between the convection oven, fan oven or gas mark as mentioned.

This method is how I do my regular ribeye too. I'll heat to 120 internal in the oven and give it a hard sear in the cast iron. Magnifique

What temp would you recommend for a 3lb ? And I what internal heat would be a good medium well?
I’d still do the same cook temp, and internal temp for medium well before the sear would be around 140-145.

Would it be better or worse the treat the meat with olive oil? We do it for grill but not sure if it suits oven cooking.
I saw another chef video on this, he said no because it acts like a barrier between the meat and salt and interferes with the salt doing its job.

Depending how long and how much salt you used on your brine. I usually do unless it’s still visible on the outside!

Just curious where you are getting a Tomahawk Ribeye that is this big? Some of us have to use an electric stove and do not have a cast iron skillet.
