    yes the Gel is piping gel you can buy this from any cake supplier.

    This Technic can be applied to butter cream icing or chocolate ganache cake too just make sure you glue the stand on top of each other.

    Awesome technique..very important question. Would this cake successfully transport this way? Or would it need to be transported and assemble on site? I noticed that final top layer was a bit wobbly. If it can transport, how long does this glue take to set? And was that tylose glue used? Thanks for showing video.

    good video but i see a lot of flaws and i would hate someone use that system and have there cake come crashing down, for a cake that big you really need to put a center dowel that drives through the ENTIRE cake to keep the whole thing together, even if you are going to assemble on site it will be much more sturdy, find any other assembly video and they will show you how, also she is making the dowels for each layer even and the reason why that isn't AS good is because after you let each tier settle over night it may not be completely even so when you insert a dowel you want it to be the same height as the cake which may be a little lower or higher then other sides of the cake, and even if each tier is a little un even it won't matter because you will measure each dowel in the spot you put it in so the dowels will remain even in the spot they are being put (little confusing lol) but this allows the tier on top to rest on a level service insuring more support, so while this is a convenient and easy system because it doesn't require a lot of measuring, if you are putting a lot of hard work into your cake you want to have the best support system possible, know one wants to take all the time and money for it to come crashing down, 😊 just wanted to give some insight on this

      Dallin Moravec I disagree simply because you are suggesting that each dowel be measured separately. so if someone, god forbid, has a cake that settled lean if you measure the dowels lean the top won't be level. cutting all the dowels the same height ensures that the next cake must sit on a level surface. this ultimately adds to its stability as you increase in height. but other than that I agree with you by saying the cake would benefit from a central dowel. I do that for 3 tier cakes that I use cardboard cake boards and wooden dowels. when I do more tiers I use plates and poly or hidden dowels but I hot glue each cake board to the plate. I've been able to drive with fully assembled cakes and no shifting at all. and I'm not taking about driving on America's lovely roads I'm talking about Jamaica's pothole riddled hilly terrain 3rd world country roads. Give the lady some credit. She is at least doing some things right. Only flaw is the icing or gel that she used between the board and plate. That makes no damn sense. double sided tape, hot glue, or any non skid liner makes more sense to get the horizontal stability this lacks for travelling

      Looks like just frosting. I’ve read books that say you can smear buttercream on the plates/cake circles, some say royal icing. I wouldn’t know for sure. ??

      You can buy the stacking plates at Michael’s or Hobby Lobby. Baker’s use frosting as their glue to keep the cakes from sliding off the plate. I had a cake baker tell me that and started using that technique to keep my homemade double stack from slipping and sliding off the plate.
