Stuffed sweet bell peppers are a healthy, delicious, budget-friendly dish you’re sure to enjoy. Stuffed with the “Best Healthy Veggie Ground Meat”, whole grain of your choice [I used Kamut], black beans, tomatoes, southwestern spices and vegan cheese. This tidy and complete healthy vegan dish is sure to satisfy.

Southwestern Ingredients
• 4 Bell Peppers
• 1 cup Kamut
• 2 cups Vegan meat
• 1 14 oz Can Diced Tomatoes
• 1 can Black Beans
• 1 tsp Dried Cilantro
• 1 tbsp Chili powder
• 1 1/2 tsp Ground cumin
• 1/2 tsp Smoked Paprika
• 1 tsp Onion powder
• 1 tsp Garlic powder
• 1/2 tsp ground coriander
• 1/4 tsp cayenne pepper
• 2 Tbsp Nutritional Yeast
• Vegan Mexican blend cheese
• Black pepper and Salt to taste

Tips:
• Par boil Bell Peppers 6-8 minutes.
• Cover, parchment paper and foil. Bake 350F (175C) 25-35 minutes.
