Lamb is more abundant in this region of the world, most dishes that use ground beef typically use a 50/50 blend of ground beef & lamb. Adding different meats too ground beef is a great way to elevate flavor to next levels! Ideas to experiment with. That being said, Those stuffed bell peppers look B-E-A-utiful! And my mouth is salvating... 🤤

I made these last night and the filling was amazing my one and only issue my peppers were not fork tender but I think next time ill boil in chicken broth to make them tender. We still ate the entire thing peppers slightly crunchy but its bell peppers fire anyway. Love this recipe.

Hi AB, I often make these without cooking the meat first. Combining all the ingredients into big meatballs and really packing the peppers with that. It's like a meatloaf in a pepper, lovely texture and it holds together pretty good!

Looks delicious! Stuffed bell peppers is one of my favorite dishes. Except I use ground turkey instead of beef, and sometimes I’ll replace the rice with cauliflower rice. Just absolutely packed with protein and extremely low carb. I fix them every week for my meal planning. Has helped me lose over 60 lbs!
That looks DELISH!! It's been a minute since I made stuffed peppers 🤔 I think next time I do it, it will be with the mix of shredded pork, baked beans and white rice topped with monterrey jack. my recipe is similar to yours but my secret weapons is enchilada sauce. I put the green verde sauce in the casserole dish surrounding the peppers, it helps get them tender and adds a nice infused flavor.

With that said you mentioned to through some combos out there and a quick combo that came to my mind was ref kidney beans and quinoa. I know healthy...meatless. I make it with taco filling in my peppers and I put seasoned bread crumbs on top. Yummy!
